How to choose fresh ingredients
How to choose quality squid
- You should choose squid that is shiny, with clear eyes, not yellow or leaking fluid, and the body should be opaque white like milk.
- Good squid will have the head and tentacles firmly attached, with firm flesh that has high elasticity.
- Do not choose squid that is yellow, leaking fluid, or with eyes that have turned cloudy.
- Absolutely do not buy squid if the flesh feels soft and mushy and easily separates into parts, as these will not be fresh and tasty.
How to choose safe ground pork
- You should choose pieces of meat that have a bright color. Fresh meat usually has a light pink or light red color, and the fat will have a slightly ivory white color.
- When you cut with a knife along the grain, you will see the meat slightly shrink, the surface is dry, and the skin is soft; this indicates fresh meat.
- It is advisable to select pieces of meat that have a distinctive smell of meat, with no unpleasant or fishy odor.
- You should not choose pieces of meat that have unusual colors, slightly yellowish, pale, or too dark, with a shiny surface, feel slightly slimy to the touch, and have a fishy smell.
How to prepare Stuffed squid with tamarind sauce

Prepare the squid
After purchasing, remove the insides, the ink sac, and cut off the squid tentacles. Then rub it with a little salt and lemon to eliminate the fishy smell. Next, rinse the prepared squid with clean water and set it aside to drain.

Prepare other ingredients
Peel the onion, rinse it briefly with water, and chop it finely. Peel the carrot, rinse it with water, and then dice it.
Next, place the onion, carrot, and ground pork into a bowl, then season the bowl with 1 teaspoon
Stuffing meat and steaming squid
You put the marinated ingredients including ground pork, carrots, and onions into the squid tube, then stuff the squid tentacles inside and use toothpicks to pierce through the head and tentacles to keep the meat from falling out.
Next, you pour 500ml of filtered water into the steamer pot, then arrange the squid in the steamer, place the pot on the stove and cover it to steam on high heat for about 15 minutes. After 15 minutes, turn off the stove and take the squid out onto a plate.
Squid sauce with tamarind juice
You add to a bowl 1 tablespoon of chili sauce, 1 tablespoon of ketchup, 2 tablespoons of fish sauce, 1 teaspoon of seasoning, 2 teaspoons of sugar, 2 tablespoons of tamarind juice, 2 tablespoons of filtered water, and then stir well to dissolve the mixture. You can adjust the seasoning to suit your family’s taste.
Then, you place a pan on the stove and pour the mixed ingredients into the pan, turn on medium heat and cook until the mixture boils, then add the squid and sauce both sides for about 3 – 5 minutes.
Finally, take the squid out onto a cutting board, let it cool for about 10 minutes, then cut into round slices about 1/2 finger thick to complete.
Final product
Place each piece of stuffed squid in tamarind sauce on a plate, garnish with a little cilantro and green onion on top, and then enjoy.
Taking a bite of squid with the rich sweet and sour flavor combined with minced meat is extremely appealing; eating it with white rice is truly outstanding.
