How to Choose Fresh Ingredients
How to Choose Fresh Squid
- Choose squid with shiny, bright skin, and a white, milky body.
- The squid meat should be firm and have high elasticity when pressed with your hand.
- The eyes of fresh squid should be clear and not bulging. Squid that is not fresh will have cloudy eyes and may have fluid leaking out.
- The head, tentacles, and arms of fresh squid will be tightly attached and firm. Squid that is not fresh will often have soft and easily separable parts.
How to Choose Spicy Fragrant Ginger
- To choose spicy fragrant ginger, you can select ginger rhizomes that are intact, with slightly rough skin and a bit of dirt on them.
- Good ginger usually has many veins, is not too large, has a dark color, and has a distinctive fragrant smell that is easy to recognize.
- Avoid choosing large ginger rhizomes with few veins, bright color, and smooth skin, as these are often ginger from China, which may be treated with harmful chemicals for health.
How to Prepare Steamed Squid with Ginger
-
Prepare the squid and ingredients
First, cut off the squid’s eyes and the beak at the front of the squid. Gently peel off the outer membrane (skin) if desired, hold firmly and gently pull the squid’s tentacles away from the body, and remove the backbone.
Finally, rinse with diluted salt water for about 10 minutes, then rinse again with clean water.
For squid species, there is no need to remove the internal organs, as this will also remove the eggs and milk inside, reducing the nutritional quality of the food.
Wash the carrot, peel it, and then cut it into thin strips. Chop the onion finely. Divide the ginger into two equal parts, slicing one part and cutting the other into small strips.
Leave the celery and green onions whole, remove any damaged leaves, wash them clean, drain, and then cut into bite-sized pieces about 2 finger lengths long.
Note:
- If the squid’s bag is broken, you need to wash it immediately with clean water, as prolonged contact will make the meat and eggs bitter and turn black.
- Be gentle while preparing to avoid crushing the squid’s eggs.
-
Marinate the squid
Put the squid in a large bowl with 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Mix well to allow the seasoning to penetrate the squid’s meat, then marinate for about 15 minutes.
-
Steam squid
Place the steaming pot on the stove, pour 100ml of water into the steaming pot. Arrange carrots, ginger, and onions on a plate, then place the squid on top. Finally, add chopped green onions and onions to fill the surface of the squid.
Put the squid plate on the steamer and steam for 15 minutes until the squid is cooked.
Note: To ensure the crispness and sweetness of the squid, do not steam for too long.
-
Prepare dipping sauce
First, pound 1/2 of the sliced ginger and 2 chili peppers until fine. Next, add 2 tablespoons of sugar, 3 tablespoons of fish sauce, and 1 tablespoon of lime juice. Stir well until the mixture is fully dissolved.
