How to Prepare Herbal Egg Tofu

  • Making Soft Tofu

    You crack the shells of 4 chicken eggs into a bowl and whisk them until the egg whites and yolks are well combined.

    In another bowl, mix 200ml of soy milk with 1 teaspoon of cornstarch and 1 teaspoon of salt, and stir well until the ingredients are combined. Then, add the egg mixture and whisk together. Finally, strain the mixture through a sieve.

  • Steaming Herbal Egg Soft Tofu

    You peel 2 preserved eggs, then cut each egg into 4 equal parts. Next, arrange the eggs in a glass tray lined with a layer of plastic wrap, then pour the soft tofu mixture on top.

    Place a steamer pot on the stove, add 1 liter of water, and bring it to a boil. Then, place the tray in the steamer and steam for about 20 minutes over medium heat (you can check for doneness by inserting a toothpick; if it comes out clean, it’s done; if not, steam for another 10 minutes). Finally, remove the tray and let it cool.

  • Frying soft tofu with century egg

    Place a pan on the stove, add 100ml of cooking oil to the pan. Wait for the oil to heat up, then add the steamed century egg tofu pieces and fry over medium heat until both sides are golden brown, then remove and let them drain.

    After that, cut into bite-sized pieces and sprinkle a little pork floss on top to complete the dish.

  • Make the egg mixture

    You crack the eggs and put all the eggs into a bowl, then beat them well so that the egg whites and yolks mix together.

    In another bowl, add 200ml of soy milk along with 1 teaspoon of cornstarch and 1/2 teaspoon of salt, then mix well. Next, you pour the beaten egg mixture into this bowl and stir evenly to combine the two mixtures. After that, strain the mixture to remove any unmixed egg whites.

  • Steamed Tofu and Century Egg

    Peel the century eggs and use a knife to cut each egg into 4 equal parts.

    Next, prepare a mold and line the bottom with a layer of plastic wrap before placing the eggs into the mold. Then, pour the mixture of century eggs you just made in the previous step into the mold until full, then steam it for about 30 minutes. Finally, remove the mold from the eggs and let it cool completely.
