How to choose fresh and delicious carp
- To choose fresh and delicious carp, buy those with shiny scales, evenly arranged without peeling or dull color. The eyes of the fish should be clear, not cloudy, meaning the fish is still fresh.
- You should choose fish that are thick-bodied, looking uniform from head to tail, with a slender body as these are usually river fish which are firmer compared to fish raised in ponds that are often larger, rounder, and fattier.
- Avoid buying fish that have a fishy smell, feel slimy when touched, and have flesh that is mushy and not elastic.

Prepare the Carp
First, cut off the fins, gills, and tail of the carp you bought.
Next, scrape off all the scales and gut the fish to remove all the internal organs.
After that, wash the fish with diluted salt water to completely eliminate any dirt and excess blood, then rinse with cold water. Once the fish is clean, cut it into 3 pieces and place it in a large bowl.
How to clean fish without fishy smell:- Remove all scales, gills, and internal organs, then use lemon to rub the entire body of the fish to eliminate any slime and fishy odor, and rinse with clean water.

Prepare ginger and purple onion
Peel the ginger and then crush it.

Steam the fish
First, add the crushed ginger and purple onion into the bowl with the fish, and rub the ginger onto the fish to enhance the flavor and eliminate the fishy smell after steaming.
Then, place the fish along with the onion and ginger into the steaming tray, cover it, and steam the fish for 20 – 25 minutes over medium heat until the fish meat turns opaque, soft, and flaky.
After steaming, take the fish out onto a plate and let it cool.

Shred and tear the fish meat
Filter out all the fish meat, carefully remove all the bones found in the meat.
Next, you tear the fish meat into small, even pieces so that when frying to make fish flakes, it will be crispier and tastier.

Fry the fish flakes
Put a pan on the stove and pour the shredded fish meat into it, frying for about 5 minutes until the fish meat is slightly firm but still moist. Then add 1 teaspoon of cooking oil and 1/2 teaspoon of turmeric powder, stirring well.
After about 5 minutes of frying, continue to add 1 teaspoon of fish sauce to the pan and stir until the fish meat starts to dry and become crispy, then add a little pepper and stir for another 5 minutes to finish.

How to Store Carp Floss for a Long Time

- When taking the floss out for use, use a clean spoon or tongs that don’t have residue from other foods to ensure the floss doesn’t spoil.
