Preparation and boiling the pork
Buy pork tenderloin, wash it thoroughly. To remove the odor, soak the meat in diluted salt water for about 2 – 3 minutes, then take it out, rinse with water, and let it drain.
Cut the pork along the grain into bite-sized pieces, about the size of a finger.
Place a pot on the stove over medium heat, add 1 liter of water and bring to a boil, then add the pork and boil for about 8 – 10 minutes until just cooked. Skim off any foam if necessary, then remove and rinse with clean water, and let it drain.

Marinate the meat
Marinate the meat with 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of pepper, and minced shallots.
Mix well and let it marinate for about 15 minutes for the meat to absorb the seasoning.

Cook the meat
Next, pour the meat into the pot along with two cups of water, add a stick of dry cinnamon, and cook over medium heat for about 15 minutes until the water in the pot reduces to about 1/2 cup, then turn off the heat.
Remove the meat to a plate to drain, and remember to keep the cooking liquid from the meat.

You shred the meat along the grain into small pieces and put them into a meat grinder, grinding at low power for 2 times, each time for 30 seconds to make the meat smaller.
Then, place a pan on the stove over medium heat, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add the meat and stir-fry for about 3 minutes until the meat is firm, then pour in the remaining meat cooking water.
You stir the shredded pork for about 15 – 20 minutes over low heat until slightly golden.

To make the floss strands fluffy and long, cut the meat against the grain into bite-sized pieces.

You marinate the meat with 5 spoons of fish sauce, 3 tablespoons of sugar, 1 teaspoon of pepper, 2 teaspoons of seasoning powder, mix well and let it marinate for 30 minutes for the meat to absorb the spices.
Note: If making for small children, you should not marinate the meat with pepper. -
Cook the meat
Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then sauté the shallots until fragrant.
When the shallots are fragrant, add the meat and cook on low heat for about 20 minutes until the meat is dried and all the moisture is gone, taste and adjust the seasoning, then turn off the heat.
