- Delicious cucumbers are usually straight, not or slightly curved, long, firm, and heavy to hold.

Prepare and boil pork belly
Wash the pork belly with salt water to clean it, scrape off and pluck any remaining coarse hairs on the pig’s skin, then rinse with cold water and let it drain.
Put a pot of water on the stove over medium heat and add the pork. Cover the pot and boil thoroughly until the meat is fully cooked.
You can check if the meat is cooked by using a chopsticks to poke into the meat; if no red juice comes out, it’s done. Take the meat out, let it cool slightly, and then slice it very thinly.

Prepare the other ingredients
Peel the carrots, remove the ends, and wash them thoroughly. Cut off both ends of the cucumber, peel if desired, wash it clean, then cut it in half, using a spoon to scoop out the seeds.
Cut the carrots and cucumbers into thin strips about the length of a finger and place them on a plate.
Wash the pre-peeled pineapple in cold water to clean it, then drain it. Take a small amount and chop it finely for the dipping sauce, then slice the remaining part into small strands.

Roll the cake with meat, sour shrimp, and vegetables
Rice noodles and rice paper bought should be cut into equal rectangular pieces, the size depending on personal preference corresponding to the thickness and length of the roll.
Place a layer of rice paper over the rice noodle, gently press so that the rice noodle sticks to the rice paper, then flip the rice noodle over to roll.
Arrange the filling on top, including a little lettuce, 1 perilla leaf, basil, mint, followed by one piece each of carrot, cucumber, pineapple, and green banana.
Finally, place a slice of thinly cut pork belly and a few pieces of sour shrimp on top, then roll tightly so that the cake wraps around the filling.
