How to choose fresh ingredients
How to choose fresh octopus
- Fresh octopus has clear eyes, a bright white belly, firm flesh, smooth skin, and moves quickly and flexibly.
- Avoid choosing those with cloudy eyes, flesh that is off-white, or mushy.
- For frozen octopus, select those with clear eyes, a grayish-brown color with a hint of green, and bright white flesh. It is especially important to avoid those with swollen bodies, as they have been stored for too long and therefore have a less fresh taste compared to fresh octopus.
- You can buy octopus from reputable places that specialize in supplying fresh octopus or at markets to minimize the risk of selecting those that have been soaked in chemicals and left overnight. You can also ask them to clean it thoroughly, and you just need to wash it and let it dry. This will be more convenient and save you time!

How to choose fresh onions
- Choose onions that are round in shape with long roots, as these are the tastiest ones.
- Good onions will have a firm, smooth skin, an attractive yellow color, no dark spots, and will cling tightly to the bulb.
- Avoid purchasing ones that have unusual shapes or completely missing the root, as they will not be tasty.
