How to choose fresh ingredients
How to choose fresh octopus
-
Fresh octopus has clear eyes, a bright white belly, firm flesh, smooth and shiny skin, and moves quickly and flexibly.
-
Avoid choosing those with cloudy eyes, flesh that is off-white, and mushy.
-
For frozen octopus, choose those with clear eyes, a brown-gray color with a greenish tint, and the flesh should also be bright white. Especially, do not choose those with swollen bodies as they have been stored for a long time, thus their taste is less fresh than that of fresh octopus.
- You can buy octopus from reputable places that specialize in supplying fresh octopus or at markets to reduce the chance of choosing chemically soaked ones that have been kept overnight. Especially, you can ask them to clean it properly and just take it home to wash and dry. It will be more convenient and save you time!

How to choose fresh pineapple
- You should choose fruits that are bright yellow; these are the ones that are ripe and delicious. Avoid those with dark brown color, as they are overripe and about to spoil.
-
In terms of shape, choose fruits that are slightly round and short. Especially, the ones with larger eyes are better, as they will have more flesh than others.
-
To avoid choosing fruits that are overripe and will spoil quickly or ferment, you can check by scent. Do not choose fruits that have a strong odor, but only select those with a sweet, moderate aroma.

How to choose fresh and delicious cucumbers
- Delicious cucumbers are those with a uniform green color, not yellowing, and the skin is not bumpy. Especially choose straight cucumbers, not bent.
- If you want to eat crunchy, fleshy cucumbers, you should choose long, slender ones. Smaller cucumbers will be sweeter.
How to prepare Stir-fried octopus with pineapple
-
Prepare the octopus
If you choose frozen octopus, it needs to be thawed by placing it in the refrigerator for 24 hours before preparing.
Then, you will separate the body from the tentacles by placing the octopus on a cutting board and using a knife or scissors to cut just below the eyes of the octopus.
You continue to split the head in half. If there are still teeth and the ink sac, you should remove them by gently squeezing until the teeth and ink sac appear, then just cut them off.
Finally, cut the octopus into bite-sized pieces.
Tip: To eliminate the fishy smell of the octopus for a more complete dish, it should be rinsed with water mixed with vinegar, alcohol, or crushed ginger.

Prepare other ingredients
First, peel the pineapple and remove the eyes, then cut the pineapple in half lengthwise, discard the core, wash it thoroughly, and cut it into bite-sized pieces.
Wash the cucumber thoroughly to remove any dirt on the skin, then cut off both ends, and slice it into quarters lengthwise. After that, cut it diagonally into bite-sized pieces.
For the scallions and celery, cut off the roots and trim the ends of the scallions, then wash them and let them drain. Finally, cut both into bite-sized sections.
Tip:
- You can buy pre-peeled and cored pineapples at supermarkets or markets. Nowadays, most people usually buy the pre-peeled type.

Stir-fry octopus
After preparing, you place a pan on the stove, then add 2 tablespoons of cooking oil to heat the pan. When you see the oil bubbling slightly, add 2 teaspoons of minced garlic to sauté until fragrant.
Next, add all the octopus into the pan and stir-fry evenly over medium heat for about 5 minutes. Season with 1 teaspoon of MSG, 1.5 teaspoons of white sugar, and 2 teaspoons of fish sauce.
Once the octopus is cooked and evenly absorbed with the seasoning, taste it and adjust the seasoning to your liking, then turn off the heat and transfer the octopus to a bowl, without taking the liquid from the pan!
Tip: To make the dish more appealing, you should not stir-fry the octopus for too long as it cooks very quickly. If you stir-fry too long, the octopus will be overcooked and become chewy, losing its crispness and sweetness. You should stir-fry the octopus just until cooked and evenly seasoned!
-
Stir-fry other ingredients
After removing the octopus to a bowl, with the old pan that still has some octopus water, continue to turn up the heat until the water is gently boiling, then add the pineapple and stir-fry for about 5 minutes to let the pineapple release its natural sweet and sour flavor.
Next, add the cucumber and continue to stir evenly for another 5 minutes.
When the pineapple and cucumber are cooked to your liking, you can season to taste according to each person’s preference. Once it’s just right, add in the chopped green onions and stir well before adding the remaining white part of the onion.
Finally, add all the octopus back in and stir-fry evenly for about 2 minutes before turning off the heat.
