Prepare the ingredients
To clean and eliminate the smell of the quail, use tweezers or a gas torch to remove the fine feathers and any blood vessels.
Soak the quail in diluted salt water for about 5 minutes, then rinse with water a few times and let it drain.
Finally, chop the larger quail into bite-sized pieces, or leave the smaller ones whole for stewing.
Peel the pumpkin, remove the seeds, wash it thoroughly, let it drain, and then cut it into bite-sized pieces.

Fry the quail
Heat 300ml of cooking oil, once the oil is hot, add the cleaned quail and fry for about 5 minutes over medium heat, turning it over to ensure the meat is evenly browned on both sides. When the quail is nicely browned, remove it to drain the oil.

Quail Stew with Pumpkin
Add 2 tablespoons of cooking oil to the pan (using the oil from frying the quail), sauté 1 teaspoon of minced garlic until fragrant, then add 200g of chopped pumpkin and 1 tablespoon of green pepper, stir-frying for about 5 minutes over medium heat.
Next, add 500ml of water, 5g of goji berries, 5g of dang shen, 5g of Chinese yam, and 5g of jujube, season with 1 teaspoon of sugar, 2 tablespoons of oyster sauce, 1 tablespoon of sesame oil, and 2 tablespoons of seasoning powder, and bring to a boil for about 15 minutes over medium heat.
Then add the lightly fried quail and stew on low heat for an additional 40 minutes, adjusting seasoning to taste before turning off the stove and serving in a bowl.
