How to prepare Quail Porridge

Prepare the quail
After buying 2 quails, first, clean the feathers off the quails and then rinse them thoroughly with water.
Next, to remove the fishy smell of the quail, use white wine mixed with a few slices of fresh ginger and rub it on the body of the quail, finally rinse it again with water and let it drain.

Marinate the quail
Put the prepared quail into a bowl with 1/2 of a minced red onion, 1 tablespoon of fish sauce, 1 tablespoon of seasoning powder, and 1 teaspoon of oyster sauce, mix well, and let it marinate for 30 minutes to absorb the spices.

Boil the quail
Prepare 2 liters of hot water in a rice cooker, add the quail and boil for 5 – 7 minutes, then use a ladle to skim off the foam for a more attractive dish.

Cook the porridge
Put 80g of lotus seeds in a pan and roast over medium heat for 5 minutes, then add 250g of rice and 80g of mung beans and continue roasting until the mixture turns golden for about 5 minutes, then turn off the heat.
After that, rinse the rice mixture 3 times with water, then soak it in hot water for 1 hour until the mixture softens, then drain the water.
Add the rice mixture to the rice cooker with the quail, add 2 teaspoons of salt, season to taste, then close the lid and cook for 1 hour.
Turn off the cooker and add a chopped green onion, and it’s done.
