Ingredients for Thai Dessert For 3 people
Coconut jelly 20 g Pear 1 fruit Jackfruit 50 gr (lychee; rambutan or any preferred fruit) Strawberry syrup 2 tablespoons (or 1 teaspoon of food coloring) Black jelly powder 50 g (available at supermarkets) Tapioca flour 100 g Pandan leaves 1 bunch Sugar 10 gr (to taste) Coconut milk 100 ml Unsweetened fresh milk 300 ml Condensed milk 100 gr Durian flesh 100 gr Gelatin powder 2 teaspoons

Prepare Ingredients
Peel the lychee and shred the jackfruit. Dice the pear and soak it in ice water to make it crunchy. Then drain and mix with 2 tablespoons of strawberry syrup for color.
Mix 100 g of tapioca flour into the pear, then boil until the diced pear floats, and scoop it into ice water.

Make Grass Jelly
Dissolve 50 g of black grass jelly powder in 200 ml of filtered water, stirring well to dissolve. Boil 800 ml of water, then add the grass jelly and stir continuously until completely dissolved.
Next, add 2 tablespoons of sugar and a few drops of banana oil, stir until the mixture simmers, then turn off the heat and pour it into a mold to set.

Make Pandan Jelly
Blend a small amount of pandan leaves with 200 ml of filtered water, then strain to extract the pandan juice.
Mix 2 teaspoons of agar-agar powder with 100 g of sugar. Boil 1 liter of water and add the agar-agar powder, stirring well to dissolve. When the mixture boils, add the pandan juice and a few drops of banana oil, stir well, then pour into a mold to set.

Make Durian Milk
Add 100 ml of coconut milk, 300 ml of unsweetened fresh milk, 100 g of condensed milk, and 100 g of durian flesh (seed removed) into a blender and blend until smooth.

Completion
Chop the grass jelly and pandan jelly into bite-sized pieces. Then, gradually add the various fruits, jelly, grass jelly, coconut jelly, and pomegranate seeds into bowls, and pour the durian coconut milk over them. Add ice and you can enjoy it right away.
Notes when making Thai sweet
- You can adjust the amount of sugar to suit your family’s taste. However, the jelly should have a moderately sweet taste, lightly sweet, so as not to lose its original flavor.
- If you don’t finish it, you can pack it in a box and store it in the refrigerator and consume it within about 1 day.
