How to choose good sweet potatoes:
- Buy sweet potatoes that have an intact appearance, not cracked or chipped. When holding the potato, it should feel heavy, firm, and not bruised. Avoid buying very large potatoes as they tend to be fibrous; medium-sized potatoes are the best.
- If you want to buy sweet potatoes that are starchy, fragrant, and fluffy, choose those that have a layer of powder or dirt stuck to them.

How to make Green Tea Sweet Potato Dessert

Steam and mash the potatoes
Peel the sweet potatoes and cut them into 2 cm thick rounds. Steam the potatoes until soft for about 15 – 20 minutes. Then, take the potatoes out into a bowl and use a fork to mash them finely.

Mixing and boiling the potato dough
Evenly divide the mashed potatoes and place them into 2 separate bowls.
In one bowl, add green tea powder, condensed milk, and 100 grams of tapioca flour. Knead the mixture into a smooth dough. In the other bowl, add condensed milk and 100 grams of tapioca flour and knead until a smooth dough is formed.
Roll each type of dough into long strands and cut them into equal pieces of 2 cm long.
Boil the dough pieces on the stove until they are cooked and float to the surface, then remove and place them into cold water for 2 – 3 minutes, then take them out and let them drain.

Cooking the dessert and finishing
Add 1 liter of water into a pot, then add 100 grams of sugar and 100 ml of coconut milk. While cooking, stir the mixture until dissolved, then add 30 ml of dissolved cassava starch.
Continue adding the cooked sticky potato into the pot and cook on low heat until the dessert thickens, then add 10 ml of fresh cream and stir well for 1-2 minutes. Turn off the heat and scoop the dessert into bowls to enjoy.
