Ingredients for Crispy Rice with Dipping Sauce Serves 3

Rice 1 cup Glutinous rice 1 cup Dried shrimp 50 gr Shallots 1 bulb Pork fat 300 gr Green onions 2 sprigs Water 5 tablespoons Fish sauce 5 tablespoons Sugar 5 tablespoons Pepper 1 teaspoon Chili powder 1 tablespoon Chili 3 pieces

How to make Crispy Rice with Quet Sauce

  • Cook the rice

    You mix 1 cup of rice and 1 cup of sticky rice into a rice cooker, then rinse the rice and sticky rice clean (discard the rinsing water).

    Add clean water to the pot, measuring about half a finger’s length of water, and then add 1 tablespoon of cooking oil to the pot.

    Cover the pot, press cook, and wait for it to finish cooking.

    In the meantime, soak 50g of dried shrimp in 100ml of hot water for 15 minutes.

  • Press thin and dry the rice

    When the rice is cooked, fluff it up and let it cool. Prepare a tray, cover it with a layer of plastic wrap, and spread a little cooking oil to prevent sticking.

    Press the rice thin to about 0.5 cm and then put it in the refrigerator for 30 minutes.

    Take the pressed rice out of the refrigerator, cut the pressed rice into bite-sized pieces (about 10 cm square as shown below or according to your preferred size).

    Then put it in the oven to dry for 2 hours at a temperature of 120 degrees Celsius.

  • Final Product

    The crispy rice cracker combined with the spicy dipping sauce made from pepper and chili.
