Ingredients for Sweet and Sour Basa Fish For 4 people

Basa fish 1 kg Starfruit 300 grams Chili 5 pieces Annatto powder 1 teaspoon Seasoning powder 2 teaspoons MSG 1/3 teaspoon Fish sauce 3 tablespoons Tomato sauce 1 tablespoon Ground pepper 1/2 teaspoon Sugar 1 tablespoon

Tools: pot, bowl, plate, gas stove.

Tips for choosing good basa fish:

  • Fresh and tasty basa fish is best when still alive, so if possible, choose fish in this condition.
  • If the fish has been cleaned and cut into pieces, pay attention to the skin to see if it is still fresh, the flesh should be firm and not mushy, and the eyes should be clear and bulging.
  • When selecting fish, check the gills; if they are still red, the fish is fresh, but if they are pale or dark, the fish is spoiling.

Choose fresh, green starfruit that is not bruised.

  • Prepare the fish

    Put the basa fish, cut into pieces, into a large bowl, then add salt and vinegar, and rub the pieces of fish evenly for a few minutes to remove the slime and odor, then rinse with water and let it drain.

  • Marinate the fish

    Marinate the fish with the amount of seasoning powder, salt, sugar, fish sauce, ketchup, monosodium glutamate, and pepper as indicated in the ingredients section.

    Finally, add some annatto oil for color to make the braised fish look appealing and mix well. Let the fish marinate for about 30 minutes.

    Peel the starfruit, cut the edges of the wings, and slice it thinly in star shapes about 0.3 mm thick. Peel the shallots and slice them.

  • Caramelizing Fish

    Sauté the onion until fragrant and golden in the oil, then add the marinated catfish and pour the marinade over it.

    During the cooking process, turn the fish regularly so that the marinade absorbs evenly and the fish firms up; when the marinade boils, reduce the heat. Finally, add half of the starfruit for garnish.

    Reserve half of the starfruit for decoration to make it visually appealing.

    Add water to the pan with the fish and cook over high heat; when the water boils, lower the heat and simmer until the sauce thickens, then serve on a plate.
