Prepare the fish

Marinate the fish with the amount of seasoning powder, salt, sugar, fish sauce, ketchup, monosodium glutamate, and pepper as indicated in the ingredients section.
Finally, add some annatto oil for color to make the braised fish look appealing and mix well. Let the fish marinate for about 30 minutes.

Peel the starfruit, cut the edges of the wings, and slice it thinly in star shapes about 0.3 mm thick. Peel the shallots and slice them.

Sauté the onion until fragrant and golden in the oil, then add the marinated catfish and pour the marinade over it.
During the cooking process, turn the fish regularly so that the marinade absorbs evenly and the fish firms up; when the marinade boils, reduce the heat. Finally, add half of the starfruit for garnish.
Reserve half of the starfruit for decoration to make it visually appealing.
Add water to the pan with the fish and cook over high heat; when the water boils, lower the heat and simmer until the sauce thickens, then serve on a plate.
