  • Choose mushrooms that are still in bud form; when touched or gently squeezed, they should feel slightly firm, which means they will taste better and be sweeter when eaten.
  • Choose straw mushrooms that are uniformly sized, with black or gray color, as they are tastier than white mushrooms.

  • Prepare the ingredients

    Remove any old, bruised, or rotten stems from the water lily flowers. Then, wash them clean and let them drain.

    Cut off the stems of the straw mushrooms, then wash them clean with water and let them drain.

  • Boil the straw mushrooms

    Place a pot on the stove, and add the straw mushrooms to the pot. Next, pour enough water into the pot to cover the mushrooms and boil for about 5 minutes over medium heat until the mushrooms are soft. After that, remove them and let them drain.

Finally, taste and adjust the seasoning to your liking, then turn off the heat.

    Transfer the stir-fried water spinach and straw mushrooms to a plate, sprinkle a bit of ground pepper for added aroma, and the dish is complete.
