  • Choose clusters of fresh green butterfly flowers.
  • Freshly picked butterfly flowers will have a very distinctive fragrant smell, and you should choose to buy them.
  • Select clusters with many unopened buds, which will give a crunchier and sweeter taste when eaten.
  • Avoid buying flowers that are bruised, crushed, overly bloomed, or have lost their fragrance.

How to choose fresh duck eggs

  • Check the eggshell with your hand; if the shell is smooth and shiny, it means the egg has been stored for a long time. Fresh eggs, just harvested, will have a rough, slightly bumpy shell.
  • Pick up the egg and shake it gently; if there is no sound, it is a good egg. If the egg makes a loud noise, it means it has been stored for a long time and is about to spoil.
  • Avoid buying eggs that have a foul smell, have cracks on the shell, or even leak liquid from inside.

  • Prepare the morning glory

    When buying morning glory, remove any damaged, bruised, or old stems, then wash thoroughly and drain.

    Place a pan on the stove, add 2 tablespoons of cooking oil, and cook over medium heat until the oil is hot, then quickly add the morning glory and stir for about 30 seconds to coat it evenly with oil.

    Next, add about 4 tablespoons of water and sauté for 3 minutes until the morning glory is tender and the water has reduced.

    When the morning glory is cooked and the water in the pan has reduced, crack 1 duck egg into the pan, continuously stir so that the egg does not clump, and season with: 1 teaspoon of seasoning powder and 1 teaspoon of monosodium glutamate.

    Continue to stir for about 2 minutes for the seasoning to be absorbed evenly into the morning glory and egg; if you want the egg to be fully cooked, stir for an additional 2 minutes. Adjust the seasoning to taste and then turn off the heat.

    Finally, serve the sautéed morning glory with eggs on a plate, add a little ground pepper for aroma, and enjoy!
