How to choose fresh, fragrant ginger
- You should choose ginger roots with 1 – 2 fresh, small buds, however, you should not choose ginger roots that have too many newly sprouted buds as the nutrients in ginger may be lost.
- Additionally, you should choose ginger roots that still have dirt on the skin, rough instead of choosing those that are too clean and white because it’s easy to mistakenly buy ginger soaked in chemicals.
- You can check the flesh of the ginger before buying. Fresh ginger will have clear round veins. In contrast, if you see the round veins are blurred and the flesh is very fibrous, you should not choose it as it is withered ginger and lacks nutrients.
How to prepare Snakehead Fish Floss
-
Preparing the ingredients
After scaling the fish, it will be very slimy, so to eliminate the fishy smell and slime, you soak the fish in vinegar or white wine for 10 minutes.
Then, you pour 2 tablespoons of salt onto the fish and massage it from the outside to the inside. Finally, rinse the fish with water to remove the slime.
Shallots should be minced, while ginger should be peeled and sliced. Lemongrass should be cut into sections and smashed.
-
Steaming fish
The next step, you use ginger and lemongrass to line the steaming tray, helping the fish become more fragrant and not fishy.
You should steam the fish just enough to remove the bones to retain both the nutrients and the firmness of the fish meat.
-
Stir-frying floss
While waiting for the fish to cool, you prepare the seasoning sauce to stir-fry with the fish. You boil 2 tablespoons of fish sauce, 2 teaspoons of seasoning powder, a little sugar, and a bit of fresh turmeric juice until the mixture thickens.
After the fish has cooled, you separate the fish bones and take each piece of fish meat to rub through a sieve to make floss.
When the fish is completely shredded, you start adding the fish to the pan and stir-fry it dry for about 15 minutes. Then, you drizzle the seasoning sauce over and continue to stir-fry on low heat for about 30 minutes.
When you find the floss is just dry enough, you taste a little; if it has a sweet and chewy flavor, with a fragrant pepper and salty taste, you can turn off the heat!
-
Final Product
Fish floss with the right flavor is a combination of the sweetness of fresh fish, the fragrant smell of fish sauce, and the salty taste of spices. You can enjoy fish floss with a bowl of hot rice or plain porridge.
This promises to be the ideal dish for those days when you “don’t know what to eat”!
