  • Prepare and chop the pork

    To reduce the smell of pork, you can rub a tablespoon of salt onto the piece of meat for about 5 – 7 minutes and then rinse it under clean water 2 – 3 times. After that, drain it.

    Next, place the meat on a cutting board, cut it into small pieces, and mince it finely.

    • Smash and finely chop a shallot and mix it with about 30ml of white wine, then massage the piece of pork with it. After 10 minutes, rinse it thoroughly with water 2 – 3 times.
    • You can rub the piece of meat with the juice of one lemon for about 7 – 10 minutes and then rinse it with clean water.
    • During the marinating process, you should use plenty of onion and garlic so that the meat, after cooking, not only loses its characteristic smell but also becomes fragrant.

  • Cook the soup

    Place a pot on the stove, add 2 tablespoons of cooking oil into the pot and heat over medium heat. When the oil is hot, add the remaining chopped green onions to sauté until fragrant, then add the marinated minced meat and stir-fry for 5 minutes.

    When the meat is cooked and firm, add 2 cups of water, bring to a boil for about 5 minutes, then add the mustard greens and season the pot with a mixture of spices including: 1/2 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and 1/2 teaspoon of ground pepper, stirring gently to dissolve the spices.

    After 5 minutes, when the soup boils again, taste and adjust the seasoning, add chopped cilantro, then turn off the heat.
