  • Prepare the ingredients

    Peel the onion and chop it finely. Clean the chickpeas and boil them briefly. Peel the garlic and crush it. Remove the seeds from the chili and chop it.

  • Make the spice mixture

    Heat a non-stick pan, add the canola oil and bring it to a boil, then add the garlic and onion and stir-fry until cooked, then turn off the heat. As soon as you turn off the heat, add the fennel powder and fennel seeds to the pan and stir well, letting the pan cool for about 1 minute.

    Add the ingredients including: chickpeas, the spice mixture made in step 2, tomato sauce, 1/2 teaspoon of salt, marjoram, chili, 30 ml of soy sauce, and sparkling water into a mixing bowl and mix well. Then transfer this mixture to a food processor and blend until smooth.

    When the mixture is smooth, add the tapioca flour into the processor, blend until it forms a uniform mass.

  • Sausage Wrapping and Steaming

    You divide the sausages into equal parts, shape them by rolling, then place them into collagen casings and seal both ends tightly.

    Next, wrap an outer layer of aluminum foil, making sure to tightly seal both ends of the foil so that steam does not enter the sausages during steaming.

    Place the steamer pot on the stove, add water and bring it to a boil, then place the sausages in to steam. Steam for about 40 minutes, open the lid, flip the sausages, and continue steaming for another 30 minutes.

    Once done steaming, open the lid of the pot, take the sausages out and wait for them to cool down.

    Once the sausages have cooled, unwrap the foil and place them on a plate. When eating, dip them in a little chili sauce or garlic chili soy sauce to enhance the flavor.

    Then add 70gr of tapioca flour and mix well until the mixture is well combined.

    Tip:

    • You can substitute tapioca flour with cornstarch or glutinous rice flour.
    • You can buy red ham to replace the step of adding chili sauce for color.

    Finally, add 50ml of boiling water and use your hands to knead the mixture for a chewier and stickier ham.

    Shape the sausage to your desired size, place it on a thin sheet of tofu skin, and roll it tightly so that the tofu skin wraps around the filling inside.

    Place in a steamer and cook on high heat for about 20 – 30 minutes depending on the size of the sausages you wrapped.

    Note: After steaming, let it cool and place in the refrigerator, use it the next day for better flavor and tenderness of the sausage meat.

    Skewer the sausages on sticks, then cut into small round slices and fry in a pan until the sausages are evenly golden brown, then turn off the heat.
