How to choose good soybeans and flour

  • You should choose fresh soybeans, with no signs of mold or many unusual beans, and they should have a creamy white color, uniform color.
  • The soybean pods should not have cracks or have sprouted. The beans should have a light, pleasant aroma, a rich smell, and when squeezed, the beans should not crumble or be soft.
  • For flour, choose the type that is still within the expiration date, not clumped, and buy from reputable flour-selling establishments.

  • Wrap and boil vegetarian ham

    Use non-stick paper to wrap the vegetarian ham and tightly cover it with a layer of aluminum foil. Place the vegetarian ham in a pot of boiling water and boil for about 30 minutes.

    • Prepare the spare ribs and pork slices

      Soak the pork slices in water for 1 hour, then rinse thoroughly and squeeze dry.

      Next, slice 40gr of pork thinly, squeeze again to ensure it is very dry before putting it into the blender.

      Note:

      • All ingredients should be soaked in cold water and avoid soaking in hot water as it may cause the spare ribs and pork slices to break down.
      • When blending the pork slices, do it dry without adding water.

    • Pound the pork ribs

      Shred the vegetarian pork ribs into small pieces (shredding them will make it easier to pound), drain the water once more, then put them into a mortar and pound them until they are crushed. Do this until all 6 pieces of vegetarian pork ribs are done.

      Tip:

      • Do not grind the pork ribs but pound them to have attractive and chewy meat fibers in the ham chay.

    • Stir-fry and pound the spare ribs for the second time

      Place a pan on the stove, add 3 tablespoons of cooking oil and wait for the oil to heat up, then add 1 teaspoon of garlic and sauté until the garlic turns a deep golden color.

      Add the pounded vegetarian spare ribs and ground vegetarian pork, and stir well to let the mixture absorb the garlic flavor.

      Add the seasoning mixture including: 1/2 teaspoon of five-spice powder, 1/2 teaspoon of ground pepper, 1/2 teaspoon of garlic powder, 1 teaspoon of vegetarian seasoning, and 2 teaspoons of sugar into the mixture and mix thoroughly until the seasoning dissolves. It is advisable to let it sit for 5 minutes before adding the flour.

      Then add 2 tablespoons of tapioca flour and stir well for about 10 minutes until the flour is fully cooked, then turn off the heat.

      Tip: Besides tapioca flour, we can also use corn flour, glutinous rice flour, or cassava starch as substitutes.

      Put the mixture into a mortar for the second pounding, pound for about 15 minutes until the mixture returns to a creamy white color and has a certain stickiness, then stop.

    • Wrap and steam the vegetarian ham

      Shape the pounded vegetarian ham, using parchment paper to wrap it around.

      Then wrap an additional layer of banana leaves on the outside to ensure better steaming.

      Tip: If there is no parchment paper, we can wrap with multiple layers of banana leaves or use aluminum foil as a substitute.

      The vegetarian ham has been wrapped and steamed until cooked. After steaming, let it cool completely and then put it in the refrigerator for about 8 hours, so it will taste better when used.
