How to choose fresh, safe chicken
- Fresh, good quality chicken usually has shiny yellow skin that looks plump and particularly does not have unusual dark or bruised spots.
- The meat should have a bright pink color, and when pressed, it feels soft and has a noticeable elasticity, not too mushy.
- You should limit buying chicken that has slimy flesh, a strong fishy smell, or is large in size but light in weight, as it may have been injected with water to appear fatter.

Prepare the Ingredients
The whole chicken has been cleaned and the internal organs removed; you rinse it with diluted salt water, then rinse again with clean water and let it drain.
Effective ways to eliminate the smell of chicken:
- Method 1: Rub the chicken meat with a mixture of salt and vinegar in a 2:1 ratio for about 5 minutes, then rinse with clean water several times.
- Method 2: You can also replace vinegar with lemon; just rub a few slices of lemon with a little salt on the chicken meat, then rinse with clean water.
- Method 3: Smash a piece of ginger and mix it with a little white wine, rub this ginger-wine mixture on the chicken and let it sit for about 30 minutes before cooking.
