How to Prepare Fried Catfish with Lemongrass and Chili

  • Preparation and Marinating the Fish

    First, when buying the fish, you remove the black skin on the outside, soak the fish in diluted salt water to eliminate the fishy smell for 15 minutes. Finally, rinse it clean with water and let it drain.

    Chop finely 100g of lemongrass and 50g of chili, mix well with 10g of salt and 20ml of white wine to make the fish more fragrant when marinating.

    When the fish is drained, make several short diagonal cuts on the body of the fish, add the lemongrass and chili, use your hands to rub so that the spices are evenly absorbed into the fish and marinate for 2 hours.

    Add 100ml of cooking oil into the pan, when the oil is hot, add the fish and fry for 20 minutes over medium heat. Every 5 minutes, turn the fish over once to ensure both sides are cooked evenly and golden.

How to choose delicious bell peppers

  • Bell peppers have a unique and interesting characteristic compared to other vegetables, which is that bell peppers have “male” and “female” types. To distinguish them, flip the pepper over; if the bottom is divided into 4 parts, it is a female pepper, while if it is divided into 3 parts, it is a male pepper.
  • To prepare fried dishes, stir-fried dishes deliciously, the “male” bell pepper will be the perfect choice. For making juices or eating raw, the “female” bell pepper is usually chosen more often.
  • You should choose bell peppers that have a shiny, thick, smooth skin and still have the stem attached. Additionally, heavy peppers with bright colors are fresh, delicious, and nutrient-rich.
  • Avoid choosing bell peppers that are soft and mushy, feel light in hand, and have blemishes or cracks on the skin, as these are spoiled peppers that have lost their nutrients.

How to prepare Crispy Flounder

  • Preparation and marination of fish

    You clean the flounder, remove the black skin on the outside, and rub the fish with salt to eliminate the fishy smell. After that, you cut off the head and score the fish’s body so that the seasoning can penetrate evenly.

    You chop the bell pepper finely, crush the lemongrass, and gently rub both ingredients onto the fish’s body.

  • Prepare the vinegar oil mixture

    You put 50ml of soy sauce, 30ml of rice vinegar, 30gr of sugar, 5gr of salt, 2gr of seasoning powder into a pot, then put it on the stove, stir well and quickly heat the mixture for 2 minutes to dissolve the spices.

    Wash the bell pepper thoroughly, then grill it until the outer skin is charred over the gas stove, or use a torch to char the skin.

    You wrap the bell pepper in plastic wrap to let it steam itself for about 2 minutes, making the bell pepper softer and easier to peel off the charred skin.

    Next, use a sharp knife to gently scrape off the blackened outer skin of the bell pepper, then remove the seeds inside. After that, rinse the bell pepper briefly with clean water.

    Cut the bell pepper into small pieces and add it to the vinegar oil mixture along with 10gr of minced garlic, 10gr of minced chili, and 10ml of sesame oil, then mix well. Grilling the bell pepper will make your dish sweeter, more fragrant, and flavorful!

  • Frying the fish

    First, you coat the fish with a layer of crispy frying flour to cover both sides completely.

    Add 200ml of cooking oil into the pan, when the pan is hot, add the fish and fry over medium heat for 20 minutes. Every 5 minutes, flip the fish to ensure both sides are golden brown.

    While frying the fish, add the garlic to fry together to give the fish a more distinctive aroma.

    When the fish is cooked, take it out and place it on paper to absorb excess oil.

  • The gills of the fish are bright red, tightly closed, without strange odors or sliminess. If the fish is rotten, it will have a gray color. The gills are not tightly closed, have a strange smell, and are slimy.
  • The scales are shiny and cling tightly to the body, without any slime, foul smell, or mucus.
  • Pressing on the fish’s body will show good elasticity, without leaving a dent.
