How to choose fresh ingredients

How to choose fresh green mustard

  • Choose stalks of mustard that have a beautiful green color, large leaves, and small, soft stalks which will be very delicious when used to make vegetarian wraps.
  • You should not choose leaves that have turned yellow, are wilted, bruised, or eaten by pests.
  • Do not choose mustard that has flowered because at this stage, the mustard is old and has a very strong and pungent taste.

How to choose fresh mushrooms

Reishi mushroom

  • Choose reishi mushrooms that have a bright color, and are not bruised or scratched.
  • Do not buy mushrooms that are wilted or have turned yellow as they are old and not tasty.
  • It is best to buy reishi mushrooms at reputable supermarkets or food stores to ensure quality.

Wood ear mushroom

  • Choose wood ear mushrooms that have large, thick ears and a small number of young mushrooms at the base.
  • Good mushrooms have a dark amber color, a slightly shiny top, and a milk coffee color underneath.
  • Do not buy wood ear mushrooms that are too dark as they tend to become mushy when soaked in water and are less crunchy.

Straw mushroom

  • This paste has a meticulous preparation process and must be sun-dried for a period of 2 to 6 months before it can be used, which creates a distinctive flavor for this paste.

How to prepare Vegetarian Lettuce Rolls – Mustard Greens Rolled Vegetarian

  • Prepare the ingredients

    Mustard greens, cut the stems, separate the leaves, remove any damaged parts, wash thoroughly, cut off the tough stems, and keep the leaves.

    Chives should be washed and quickly blanched in boiling water until soft. The roots of the green onions should be cut off, washed, and then chopped finely.

    Straw mushrooms should be soaked in diluted salt water for about 15 – 20 minutes, washed again with water, then cut off the ends and chopped finely.

    Reishi mushrooms should have the dirty stems cut off and be washed thoroughly. Black mushrooms should be placed in a bowl and soaked in cold water for about 2 – 3 hours, then removed, washed, and sliced thinly.

  • Fry and slice the tofu

    White tofu bought should be briefly blanched in boiling water and then cut into 3 – 4 thin slices depending on the size of the tofu piece.

    Put a pan on the stove, heat 6 tablespoons of cooking oil, when the oil is hot, add the tofu and fry over medium heat until all sides are golden brown, then remove and drain the oil.

    Let the tofu cool, then cut it into long, thin slices for convenience in making the filling.

  • Sauté the filling for the lettuce wrap

    Put a pan on the stove with 1 tablespoon of cooking oil. When the oil is hot, add minced green onions and sauté until fragrant.

    Then add the shiitake mushrooms, wood ear mushrooms, and fried tofu, sauté for about 3 – 5 minutes until the mixture is soft.

    Next, season with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, stir well for the ingredients to absorb the seasoning, then turn off the heat.

  • Making dipping sauce

    To make the dipping sauce, first stir-fry the straw mushrooms with 1 tablespoon of cooking oil.

    Stir-fry over medium heat until the straw mushrooms are slightly soft and start to release water, then reduce the heat and add 1 bowl of fermented soybean paste, 3 tablespoons of water, 2 tablespoons of sugar, 1 tablespoon of peanut butter, and 1 tablespoon of toasted sesame seeds.

    At this point, gently stir and cook until the sauce boils and releases a fragrant aroma.

    Lay the mustard green leaves on the cutting board, then layer a bit of rice vermicelli, pickled vegetables, and the sautéed mushroom filling, then roll tightly.

    Use chive flowers to tie the rolls securely, cut off the excess edges of the leaves on both ends, and it’s done.
