How to choose fresh and delicious mustard greens
- Choose stems of mustard greens that have a beautiful green color, not wilted, eaten by pests or bruised.
- The best time for mustard greens is from September to April. During this time, the greens will be very tender, the leaves green, thin, and the stems thick.
- Avoid choosing mustard greens that have flowered, as they will be old and taste very strong and pungent.
How to cook Stir-fried Mustard Greens with Garlic

Prepare the ingredients
After buying, separate the leaves of the mustard greens, wash them thoroughly, drain, and cut into bite-sized pieces about 1/2 finger wide.
Peel the garlic and slice it thinly.
Tip: If you have time and want to ensure food safety, you can soak the mustard greens in diluted salt water for 15 – 20 minutes, then rinse with clean water and let them drain. -
Blanch the mustard greens
Place a pan of water on the stove, wait for the water to boil, then add 1 teaspoon of salt and the cut mustard greens.
Use chopsticks to push the greens underwater and boil on high heat for about 1 minute to help the greens soften slightly and reduce bitterness, then turn off the heat, remove the greens to a colander, and let them drain.
Note:
- Do not blanch the greens for too long as it will make them mushy and lose their crunch, resulting in a less tasty dish.
- Blanch the greens over high heat to keep them bright green and make the dish more visually appealing.

Stir-fried mustard greens
Place the pan back on the stove, wait for the pan to dry, then add 1 tablespoon of cooking oil. When the oil is hot, add in all the chopped garlic and sauté until fragrant.
Once the garlic is fragrant, add the drained mustard greens and stir-fry evenly. Season with 1 tablespoon of seasoning powder, 1/4 teaspoon of salt, and 1/2 teaspoon of sugar, then mix well to allow the greens to absorb the seasoning.
Stir-fry for about 3 minutes, until the greens are cooked and fragrant, then add 1 teaspoon of pepper, adjust the seasoning to taste, turn off the heat, and serve on a plate.
