How to choose fresh pork ribs
- Choose ribs that have a natural light pink color and feel a certain elasticity when you press them with your hand; these are fresh ribs.
- Choose medium, flat pork ribs, as large ribs will have less meat and more bones, while small ribs usually come from small pigs, which will affect the quality of the dish.
- Avoid buying pork ribs that have a purplish color and an unusual fishy smell, as these ribs have been stored for a long time and are no longer fresh.
How to choose good mung beans
- For dishes that do not use the bean skins, you can choose to buy peeled mung beans to save preparation time.
- Choose peeled mung beans that have a natural bright yellow color, are whole and not broken; these are good mung beans.
- Avoid buying mung beans that show signs of mold, with unusual bite marks, as these beans have been stored for too long and are no longer usable.
How to choose fresh spinach
- Choose bundles of spinach that have a natural dark green color, are uniformly colored, and still have their roots intact to ensure the freshness of the greens.

How to Make Hai Phong Khoai Porridge

Prepare the Ingredients
With 800g of pork ribs after purchase, wash them clean and boil the meat in boiling water for about 5 minutes to clean the ribs and remove the fishy smell.
With 300g of peeled green beans after purchase, soak them in warm water for 5 – 6 hours to let the beans swell, then remove the beans.
For the remaining 100g of spinach, pick the leaves and wash them clean. Put the spinach into the blender with 1.5 liters of water, blend until smooth, then use a strainer to extract the liquid.

Steam, grind, and mold mung beans
Mix the beans with 1 teaspoon of salt. Proceed to steam the beans; place them in a steamer pot, cover, and steam for 40 minutes until the beans are soft.
Next, put the steamed beans into a food processor in a multi-function machine, and grind them until smooth. When the beans are still warm, take a handful of beans and mold them into firm, evenly sized round shapes.
Tip: To prevent the mung beans from drying out while preparing other ingredients, wrap them in plastic wrap! -
Boil and filter the pork ribs
Turn on the stove to medium heat, add 1.5 liters of water along with 1 teaspoon of salt, and bring to a boil. Once the water is boiling, reduce the heat, add the pork ribs, cover the pot, and simmer the ribs for 2 hours.
After simmering, take the pork ribs out, keeping the broth for further cooking.
To filter the meat, use clean hands to separate the meat from the rib pieces. Then, place the meat in a bowl with 2/3 teaspoon of salt, 3 teaspoons of fish sauce, and mix well to allow the meat to absorb the seasoning.

Cook the spinach powder mixture
Add the spinach water you blended into the pot of pork rib broth along with 200g of glutinous rice flour, 100g of regular rice flour, 3 teaspoons of seasoning, and 1 teaspoon of salt.
Turn on the stove to medium heat and start cooking the mixture. During the cooking process, continuously stir to ensure the mixture blends together, preventing clumps of flour.
After about 10 minutes, when the mixture starts to thicken, reduce the heat and continue stirring for about 5 minutes until the spinach flour mixture is smooth and thick. At this point, add the pork and 1/2 cup of fried shallots and mix well.
Cover the pot and cook for another 15 minutes until the porridge boils, then you can turn off the heat.

Put a sufficient amount of porridge into a bowl, then slice 1/2 of the mung bean block thinly and add a little fried shallots on top of the porridge to finish.
