How to choose fresh and delicious apple snails
- You should choose live snails. The best tip to identify them is to touch the foot; if they immediately retract inside and close their shell, that means they are fresh.
- Choose snails that have a lot of meat, with the foot close to the outer edge revealing a bit of meat inside, the shell is not chipped, and when you pick them up, they have a natural aroma.
- Avoid choosing dead snails with a strong, fishy smell, with the foot completely retracted, feeling very light when picked up, and floating on the surface of the water. These snails will have an unpleasant smell when eaten, are not tasty, and can easily cause poisoning.

How to prepare Grilled apple snails with onion oil

Prepare the ingredients
Prepare a basin of water mixed with a bit of chili powder or 1 – 2 whole chilies (chopped or minced). Soak 1kg of apple snails for 30 – 90 minutes to allow them to expel all the slime and eliminate the fishy smell.
After soaking, take the snails out and use your hands or a brush to clean off the sand and mud still stuck on the shells, rinse with clean water 2 – 3 times, and let them dry.
How to clean snails to remove sand:
- Method 1: Use rice water instead of the water and chili mixture. Soak the snails in rice water for 2 hours.
- Method 2: Use vinegar mixed into the soaking water.
- Method 3: Soaking the snails in water mixed with diluted lemon and salt for about 1 hour is also an effective method.
Wash the lemongrass, remove the outer layer, crush it, and cut it into pieces about 1.5 finger lengths. Rinse the ginger, slice it, and crush it.
Chop the scallions, coriander, and chili; peel and finely chop the garlic.

Boil the snails
Place a pot on the stove over medium heat, add the snails with 100ml of water, a little salt, 3 stalks of lemongrass, and a bit of crushed ginger, and bring to a boil. Cover, reduce heat to low, and boil for 10 minutes until the snails open up and are cooked.
Remove the snails, discard the shells, and rinse them in clean water 2 – 3 times, then drain in a colander.

Make the scallion oil
Place a pan on the stove. Once the pan is hot, add 1 tablespoon of cooking oil. Wait until the oil is hot, then add the chopped scallions and stir well.
To make the scallion oil more fragrant, you can add 1 teaspoon of pepper and continue cooking until the mixture thickens.

Make the dipping sauce
Put minced garlic, 2 tablespoons of fish sauce, 1 tablespoon of sugar, and squeeze a slice of lemon into a clean bowl, then stir well. You can adjust the ingredients to your taste.
Next, add a little chili, lemongrass, and cilantro that have been prepared into the dipping sauce bowl, and stir well. This completes the cilantro fish sauce that pairs well with grilled snails.

Grill the snails
Place the snails on the grill, grill directly over the red charcoal until you see steam coming out of the snail’s mouth, then drizzle the scallion oil mixture over each snail.
