How to prepare Grilled Garlic Snails with Fish Sauce

  • Preparing the snails

    After buying the snails, soak them in diluted lemon juice for about 1 hour to let the snails expel all the dirt and clean off the slime. After that, rinse them several times with clean water and let them drain.

    Tips for cleaning the snails effectively
    • Method 1: Soak the snails in rice washing water with some slices of chili for about 2-3 hours, so that the spiciness from the chili will help the snails quickly expel all the sand.
    • Method 2: Soaking in water mixed with salt and lemon is also an effective way to clean the snails.
    • Absolutely do not soak the snails in water mixed with vinegar, as vinegar can overpower the aroma of the snails, making them lose their deliciousness.

    Peel the garlic, wash it clean, crush it, then chop it finely. Remove the stems from the chili, wash it clean, and chop it finely.

    Place a pan on the stove, turn on the heat to medium and add 1 tablespoon of cooking oil. Once the oil is hot, add the minced garlic and chili mixture and sauté until fragrant.

    When the mixture is aromatic, add 1/2 cup of broth, 2 tablespoons of fish sauce, 1/2 teaspoon of sugar, and 5 teaspoons of sugar, stirring well and waiting for it to boil.

    To let the snails expel all the mud and remove the slime, we will soak the snails in a diluted saltwater mixture along with 1/2 of a lime for 20 – 30 minutes.
