Ingredients for Fish Sauce Pig Stomach For 5 people
Pig stomach 500 gr (1 piece) Vinegar 3 tablespoons Sliced ginger 1 piece Chopped lemongrass 2 stalks Fish sauce 3 tablespoons Chilli sauce 1 tablespoon Minced garlic 2 tablespoons Minced chili 1.5 teaspoons Cooking oil 2 tablespoons Common seasoning a little (Salt/ sugar/ pepper)
How to choose fresh and delicious pig stomach
- You should choose pig stomach that is bright pink, without bruises, no inflammation or swelling. Avoid buying frozen pig stomach as it will lose its crispness.
- You should press the pig stomach with your hand; if it feels elastic, has some liquid on the outside but is not slimy, then it can be selected.
- Observe the thickness of the pig stomach, the inner lining should be intact, without lumps or hard particles, then you can buy it.
Boil stomach – stomach
Put the stomach into a pot with 1 liter of water. Place the pot on the stove, turn on the medium heat, and bring to a boil.
To remove the odor of the stomach, add 1/2 tablespoon of salt, 1 tablespoon of seasoning powder, sliced ginger, and cut lemongrass into the pot while boiling the stomach.
Wait for the water to boil, boil for about 5 more minutes, then turn off the heat. Remove the stomach and soak it in cold water for about 10 minutes to make it crisper.


Mix chili fish sauce
In a bowl, add 1 tablespoon of sugar, 3 tablespoons of fish sauce, 1 tablespoon of chili sauce, 1 tablespoon of minced garlic, and 1 teaspoon of minced chili, then mix well until the sugar dissolves, and adjust the seasoning to taste.


Slice stomach – thick skin
Remove the stomach and let it drain, then cut the stomach into bite-sized pieces.


Braised stomach – gastric
Add 2 tablespoons of cooking oil to the pan, place the pan on the stove over medium heat and heat the oil.
Once the oil is hot, add 1 tablespoon of minced garlic and 1/2 teaspoon of minced chili to sauté until fragrant. Then, add fish sauce with chili to the pan, add 50ml of cold water, stir well, and cook until the mixture thickens.
Next, add the sliced stomach and braise over medium heat so that the fish sauce can soak into the stomach, then add 1 teaspoon of pepper, stir well, and turn off the heat.




Final product
You scoop the braised stomach in fish sauce onto a plate and enjoy it with hot rice!
