How to choose coconut flesh for making tapioca pearls
- The coconut flesh you choose should be of medium quality, not too old as it will be very hard and won’t taste good; if it’s too young, it can easily break when making tapioca pearls.
- To select the right coconut flesh, you can use your fingernail to press into the flesh. If it feels dry and hard to press, then it’s old flesh; if it feels soft, it’s young coconut flesh. If it feels just right, it’s good coconut flesh.
- You can buy coconuts that have already been peeled; the inside of the coconut flesh should have a translucent white color, not clear, slightly cloudy, or ivory; the outer shell should be light brown.

How to make coconut tapioca pearl drink
-
Chop and mix the color of the coconut flesh
Cut the coconut flesh into small dice and place it in a bowl.
To make the coloring mixture, wash the beetroot, peel it, and cut it into small pieces. Then blend it with about 300ml of water. Blend the beetroot until smooth, then strain it through a strainer to extract the juice, discarding the pulp.
Next, pour the beetroot juice into the bowl of coconut flesh. Mix well and soak for 20 – 30 minutes for the coconut flesh to absorb the color evenly.
Finally, pour the mixture through a strainer and let it drain.
-
Mix the flour and wrap the coconut to make jelly
Put 100g of tapioca flour into a bowl, gradually add 50ml of boiling water into the bowl of flour, and mix well.
Then, add another 50ml of boiling water, continue mixing until the flour mixture absorbs all the water. Use your hands to mix and knead the dough into a fixed, smooth, and pliable mass.
Take a small amount of dough, flatten it out, and place a piece of coconut pulp in the center. Wrap the dough around it and roll it into a ball. Continue doing this until all the ingredients are used up.
-
Boil tapioca pearls
Place a pot on the stove, add about 500 – 700ml of water into the pot, and heat it over medium flame.
When you see the water in the pot starting to boil, add all the tapioca pearls into the pot. Boil until the pearls float to the surface and the outer layer turns translucent, then turn off the heat.
Remove the pearls into a bowl, then add 200ml of sugar water, mix well, and soak for about 10 minutes for the sugar water to absorb into the pearls.
-
Pour coconut water into a glass and add tapioca pearls
Prepare a glass of ice, pour fresh coconut water into the glass. Scoop the tapioca pearls on top along with some coconut flesh for additional decoration, and it’s done.
-
Final Product
Chilled coconut water, sweet and refreshing combined with chewy tapioca pearls inside, while the outside is a bit chewy with a light sweetness from sugar. This is definitely a refreshing drink for this summer.

How to choose ripe, delicious durian without bitterness
- Shape: Fruits that are slightly misshapen will be of better quality than round, large fruits.
- Stem: Choose fruits with fresh stems that have a strong fragrance. You can gently press with your finger to test; if the stem feels wet, it is still fresh.
- Durian spikes: Choose fruits with fresh-looking spikes that are green, firm, and widely spaced.
- Durian segments: Naturally ripened durian is easy to separate, with shiny yellow segments that are smooth and rich. In contrast, chemically-treated durian is difficult to separate, often has a bitter texture, and is light yellow in color.
- Aroma: Naturally ripe durian has a strong, distinctive smell that can be detected from a distance. Chemically-treated durian will not have a strong characteristic aroma, sometimes lacking any scent.
