Sugarcane 500 gr (about 3 – 5 long pieces) Coconut cream 90 ml (for the sugarcane juice) Coconut cream 80 ml (for the jelly) Fresh coconut water 300 ml Unsweetened milk 220 ml Agar powder 6 gr (can choose one of the two types of jelly: Agra – crunchy or Jelly – chewy) White sugar 80 gr Jackfruit 100 gr Shredded coconut 100 gr Roasted peanuts 50 gr

How to choose sugarcane to be sweet and juicy

  • The sugarcane must have flexibility, with a uniform color throughout the stalk. This indicates that the sugarcane is soft, easy to extract juice, has a lot of juice, and contains all the necessary nutrients and sugar content.
  • The sugarcane should not have cracks; if there are cracks, the sugarcane will be dry and no longer maintain the initial quality, and the amount of juice extracted will not be guaranteed.
  • The joints of the sugarcane must be uniform and long; this way, it will yield more juice than those with short joints.
  • After peeling the sugarcane, choose stalks that are not too yellow and not too green. Green cane is young, not sweet, while overly yellow cane is old, very sweet and hard.

How to choose coconuts for coconut milk

  • You should choose dry and slightly mature coconuts. When you pick up the coconut, shake it inside to hear the sound of water and feel its weight.
  • If you choose a young coconut, the flesh will be less, and the coconut milk will not be as thick as that made from mature coconuts. You should consult with the seller to help choose a satisfactory coconut.

How to make Coconut Sugarcane Juice

  • Make Coconut Jelly

    Layer of fresh coconut jelly:

    Place a pot on the stove, add 300ml of fresh coconut water, 30g of sugar, and 3g of agar powder. Cook on low heat, stirring constantly to dissolve all ingredients.

    When the mixture starts to boil, turn off the heat, pour it into a rectangular or square mold, and let it sit for about 15 – 30 minutes until the surface sets.

    Layer of coconut cream jelly:

    Place a pot on the stove, add 220ml of unsweetened fresh milk, 80ml of coconut cream, 50g of sugar, and 3g of agar powder. Cook on low heat, stirring constantly to dissolve all ingredients.

    Cook until the mixture boils, then turn off the heat. After that, pour the hot coconut cream over the set surface of the fresh coconut jelly.

    Place the mixture in the refrigerator for about 30 minutes to let it set into jelly.

    Note: To prevent the jelly from separating into two layers and lacking adhesion, pour the layer of coconut cream while it is still hot onto the surface of the fresh coconut water jelly that has just set, or you can lightly score a few lines on the surface of the jelly below before pouring the new layer on top!

  • Extract Sugarcane Juice

    When buying sugarcane, ask the seller to peel off the skin and cut it into small pieces just enough to fit into the juicer.

    Gradually feed the sugarcane into the juicer and extract the juice until all the sugarcane is used up.

    Cut the coconut jelly into small bite-sized pieces.

    Pour a sufficient amount of sugarcane juice into each glass, add ice cubes, then add 30ml of coconut milk, coconut jelly, jackfruit, and crushed peanuts on top, then serve immediately.
