- Choose chicken leg mushrooms that have bright colors, with uniformly sized mushrooms about 2 fingers wide.
- Fresh chicken leg mushrooms will have an intact cap, not bruised or leaking water.
- Do not choose mushrooms that are too large or longer than about 15cm, as they are often old mushrooms, hollow inside.

How to make Tomato Stir-Fried Noodles

Prepare the ingredients
Boil about 1 liter of water, add the noodles, and to prevent them from sticking together when cooked, add 1 tablespoon of cooking oil, boil for 20 minutes until the noodles are soft. Then, take the noodles out and drain them.
Soak the chicken thigh mushrooms in diluted salt water for about 5 – 10 minutes, take them out, rinse with water, and cut into bite-sized pieces.
Wash the tomatoes, chop one tomato finely, and slice the other one into thin slices. Pick the cilantro leaves, remove the roots, wash them, and chop them finely.
Peel the shallots and garlic, then chop them finely. Cut the tofu into bite-sized cubes.

Mix the tomato sauce and fry the tofu
Add chopped tomatoes, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of vegetarian seasoning, 1/3 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, and 1 tablespoon of soy sauce into a bowl, then mix well.
Pour 200ml of cooking oil into a pan and heat the oil, then add the tofu and fry over medium heat until the tofu is golden brown on both sides, then remove.

Stir-fry the mixture
Add 1 tablespoon of the oil used to fry the tofu into the pan, heat it, then add minced onion and garlic to sauté until fragrant. Add the chicken leg mushrooms and stir-fry quickly over high heat for about 5 minutes until the mushrooms are partially cooked.
Next, add the prepared tomato sauce mixture, stir for another 2 minutes until the sauce thickens.
Then add sliced tomatoes, fried tofu, and noodles into the pan, stir-fry over low heat for about 5 minutes to let the noodles absorb the seasoning. Adjust seasoning to taste, then turn off the heat, add cilantro, and it’s ready to enjoy.
