How to choose fresh and delicious soybeans
- The soybeans have an off-white color, bright, evenly colored, and shiny skin.
- The beans are plump, round, of similar size, firm to the touch, not crumbly, not fragmented, and not soft. The skin of the beans should not have cracks or have sprouted, or been infested by pests.
- You should choose to buy soybeans after the harvest season, or 3 – 4 months after the harvest to select fresh, delicious soybeans.
Where to buy tofu molds
- To make tofu, you need specialized tofu molds and cannot replace them with regular food containers.
- You can buy tofu molds at various stores, supermarkets, and large markets. Additionally, you can also purchase these molds on e-commerce websites.

How to process Tofu

Prepare and soak the soybeans
To clean the soybeans from dust, after purchasing, wash them with cold water 1 – 2 times.
Then, place the washed soybeans in a bowl and pour about 1.2 liters of clean water, soaking the soybeans for about 4 – 5 hours to let them fully expand.

Grinding and Filtering Tofu
Add soybeans and 1.2 liters of water into the blender and blend until smooth. Blend at low to medium speed for about 1 minute, then switch to high speed and blend for an additional 1 – 2 minutes.
Take a deep pot and place a piece of muslin cloth on top for filtering. Slowly pour the blended soybean mixture into the filter to extract the milk and discard the residue. Continue filtering the soybean milk two more times to completely remove the sediment at the bottom.

Cooking Tofu
Place a pot on the stove, bring the soybean milk to a gentle boil for about 15 minutes, then reduce the heat and add 1 tablespoon of salt, 3 tablespoons of vinegar, and stir well with a large spoon. Cover the pot and do not disturb it, allowing the tofu to separate the water slowly until all the water is separated, then turn off the heat.
Note: If after 5 minutes the tofu shows no signs of separating into curds, continue to mix a little water and 1 tablespoon of vinegar and add it in, then wait for the tofu to separate all the water.

Pressing the mold to shape the tofu
Place a filter cloth in the mold, scoop the still hot tofu into the mold and press it tightly, let it sit for about 1 hour before taking it out.
You cut the tofu into bite-sized pieces and put it into a container with diluted salt water to store in the refrigerator refrigerator and use it within about 1 week.
How to sterilize the tofu container:
- Step 1: To ensure the tofu container you want to sterilize is free of food scraps or dirt inside, use hot water and dish soap to clean the container thoroughly from inside to outside.
- Step 2: Place the tofu container in a deep pot, fill with water until the container is submerged about 2.5 cm.
- Step 3: Place the pot on the stove, turn the heat high, and bring to a boil for 10 minutes before turning off the heat.
- Step 4: Finally, use tongs to remove the tofu container and place it on a paper towel to dry thoroughly.

How to Store Fresh Tofu
- If you have leftover tofu, you can put it in a glass jar, then add clean water or salt water, seal it tightly, and place it in the refrigerator. Remember to change the water daily to keep the tofu moist. By this method, you can keep the tofu for 1 week.
- The jar containing the tofu must be cleaned and sterilized properly and sealed tightly.
