Prepare the aloe vera
Peel the aloe vera, taking out the white inner flesh. Then soak the flesh in a diluted mixture of lemon juice and salt for about 10 minutes to reduce the sliminess of the aloe vera.
Next, take the aloe vera out and rinse it thoroughly with clean water several times. Cut the aloe vera into small pieces, rinse with cold water a few times, then let it drain.
Boil water, then blanch the aloe vera for about 1 minute. Once done, take the aloe vera out and immediately place it in a bowl of ice water mixed with 2 tablespoons of sugar.
Soak the aloe vera in the sugar mixture for 2 hours to let it absorb the sweetness.
