How to make Soy Yogurt

Sterilize the container
Place the yogurt container in a large pot, then pour boiling water into the pot until submerged.
Let it sit for about 10 minutes, then remove and drain in a basket.

Cook the soybean milk and sugar mixture
Add 500ml of soybean milk and 100g of sugar into the pot and stir the sugar until dissolved over low heat.
Then, bring the milk to a boil for about 25 minutes until it reduces to half, turn off the heat, and let it cool for 10 minutes.

Stir the milk
After 10 minutes, continue to add 500ml of soybean milk to the cooked milk and stir well.
Next, add 100ml of yogurt starter at room temperature and stir gently.

Transfer to the container
Pour the stirred milk into the jar and seal it tightly.

Fermenting yogurt
Put 500ml of cold water and 400ml of hot water into a large pot, place each yogurt jar inside, cover with a cloth, and seal the lid tightly.
Ferment the yogurt at a temperature of 40 – 44 degrees Celsius for 6 – 8 hours for the milk to ferment.
Tip:
- You can use a digital thermometer to check the precise temperature of the water.
- Depending on the height of the yogurt jar, you can reduce or increase the amount of water.

Final product
Soy yogurt is smooth and creamy, with the characteristic flavor of soybeans and a light sweet and sour taste. You can enjoy the yogurt with fruits and serve it cold for enhanced deliciousness!
Tips for successful execution:
- The starter yogurt is yogurt that has been packaged, which you can buy at supermarkets or grocery stores.
- The starter yogurt should be left at room temperature before adding it to the milk. Stir in one direction only; the more evenly you stir, the smoother and tastier the yogurt will be.
- The ratio of water for yogurt incubation is 2 hot, 1 cold, and it must cover ⅔ of the yogurt jar or bag.
- The ideal temperature for incubating the culture will range from 35 – 48 degrees Celsius; if it’s too low, the yogurt won’t ferment, or if it’s too high (over 54 degrees Celsius), the culture will die.
- It is not advisable to incubate for more than 8 hours, as it will cause the yogurt to become overly sour and unpleasant.
Storage method: Place the yogurt in the refrigerator or freezer refrigerator and consume gradually over 7 – 10 days.
