Prepare and blend the melon

Put the melon into a blender and blend until smooth.

Make the ice cream mixture
In a pot, add 3 egg yolks, 13 tablespoons of granulated sugar, and 1.5 teaspoons of cornstarch. Use a whisk to beat for about 10 minutes until the egg mixture turns bright yellow like egg cream.
Next, add the blended melon to the egg mixture.
Place the pot on the stove, turn on low heat. Use a whisk to stir continuously for about 5 minutes until the mixture boils, thickens, taste and adjust seasoning, turn off the heat, and let it cool.
