  • Prepare and blend the melon

    Cut the melon in half, use a spoon to scoop out the seeds, then cut off the stem end.

    Stand the melon upright, then use a knife to peel the skin from top to bottom, cutting into small pieces about 2 finger lengths.

    Put the melon into a blender and blend until smooth.

  • Make the ice cream mixture

    In a pot, add 3 egg yolks, 13 tablespoons of granulated sugar, and 1.5 teaspoons of cornstarch. Use a whisk to beat for about 10 minutes until the egg mixture turns bright yellow like egg cream.
