- You should choose naturally ripe bananas (Siam bananas, mature bananas, etc.) to make delicious cakes.
- Avoid buying bruised bananas, those that are soft or have dark spots.
- Choose banana bunches with both green and yellow fruits. Bananas ripened with chemicals will ripen evenly across the bunch, so this is considered a very important factor in choosing safe bananas for the family.

Mash the bananas
Peel 3 bananas and use a fork to mash them.

Beat the egg mixture
Crack 2 eggs into a large bowl, then add 60ml of olive oil, 60ml of honey, and 1 teaspoon of vanilla extract, and stir well to combine.

Mix the flour
Add 300g of oatmeal flour, 1.5 teaspoons of baking powder, and 1 teaspoon of cinnamon to the egg mixture and use a whisk to mix well.
Add 110g of yogurt, the mashed bananas, and 1.5 teaspoons of chia seeds to the flour mixture.
Mix well until the batter is smooth.
Note: Do not mix too much, or the bread will not rise and will not look nice.

Pour the batter and bake the bread
Preheat the oven to 175 degrees Celsius about 15 – 20 minutes for the oven to stabilize.
Brush a little cooking oil onto the cake mold to prevent sticking, making it easier to remove the cake after baking.
Then pour the batter to fill about 2/3 of the mold, do not fill it completely to leave space for the cake to rise, to avoid spilling over while baking.
Sprinkle a little almond on top for decoration.
Place the cake tray in the oven and bake at 175 degrees Celsius for about 35 minutes for the cake to cook evenly. Let the cake cool before cutting.
Tip:
- You can also prevent sticking by brushing a thin layer of butter all over the mold and then sprinkling a thin layer of flour on top. Invert the mold to let the excess flour fall out. You can use other nuts (almonds, cashews, chestnuts, etc.) that you like depending on your taste.
- You can check if the cake is done by using a sharp stick to poke into the cake; if the cake is cooked, the stick will come out dry, not sticky with batter. If the top of the cake is golden but the inside is not cooked, reduce the oven temperature to 160 degrees Celsius and bake for an additional 5 – 10 minutes.
