How to make Anchovy Sticky Rice

Prepare and fry dried anchovies
With 150g of dried anchovies, put them in a bowl, then pour enough water to cover the dried anchovies with about 700ml of water and soak for 15 minutes. After that, use a strainer to remove the dried anchovies and let them drain.
Turn on the stove over medium heat, add about 3 tablespoons of cooking oil to the pan, when the oil is hot, add the dried anchovies and stir-fry until they turn golden brown for about 3 – 5 minutes, then remove and drain.

Simmer the anchovies
Turn on the stove, add 1 tablespoon of cooking oil to the pan, when the oil is hot, add minced garlic and whole chili peppers and stir-fry until fragrant.
Then, add 3 tablespoons of fish sauce, 3 tablespoons of sugar, 3 tablespoons of water, and 1 tablespoon of seasoning powder, and stir well.
Finally, add the fried dried anchovies, stir well to let the anchovies absorb the seasoning, add 3 tablespoons of water and let it simmer until the water is almost gone, about 5 minutes.

Steamed Sticky Rice
Soak the glutinous rice in water overnight after washing it.
Add 1 tablespoon of salt to 500g of glutinous rice and mix well with clean hands.
To steam the sticky rice, spread the rice evenly into a steamer, using a spoon to press into the rice to create holes for steam to escape, which will help the rice cook evenly. Cover and steam the rice for 25 minutes.
Tip: To make the sticky rice shinier, mix in 1 tablespoon of cooking oil with the glutinous rice! -
Make Fried Shallots and Scallion Oil
To make fried shallots, use a slicer to slice 200g of shallots evenly so that they cook uniformly when fried, then dry them in the sun for about 2 hours.
Next, turn on the stove to medium heat, add 100ml of cooking oil, and when the oil is hot, add the shallots, stirring constantly and frying until they turn golden, about 5 minutes. Turn off the heat, continue frying the shallots until they turn a brown color, then remove them and let them drain.
Tip: When the shallots just start to turn golden, remove them; don’t wait until they are too golden because the heat from the pan will cause them to burn.To make scallion oil, finely chop 5 scallions and place them in a bowl, then add 1/2 teaspoon of salt and 1/2 teaspoon of sugar. Boil 3 tablespoons of cooking oil, gradually pour the oil into the bowl of scallions and stir well, and you will have a fragrant green scallion oil.
