- You should choose the type of ginger with a rough skin, dark color, and many veins.

How to make Sticky Rice Dessert

Cook sticky rice
Wash 1kg of sticky rice thoroughly and soak it in water for about 5 – 7 hours for the rice to expand evenly.
After the rice has expanded, rinse it with clean water and let it drain, then mix in 1/2 teaspoon of salt evenly.
Place a steamer on the stove, add the rice, and steam until the rice is cooked and turns into sticky rice.
When the sticky rice is cooked, add 2 tablespoons of sesame oil, then use chopsticks to fluff it up. Continue to cook for about 3 – 5 more minutes before turning off the heat. Remove the pot of sticky rice, let it cool slightly, and use chopsticks to fluff it up.

Cook the syrup
Wash and peel 1 piece of ginger, then cut the ginger into thin strips.
Place a pot on the stove, add 350ml of filtered water, 200gr of brown sugar, and 100gr of rock sugar, then cook on low heat for about 7 – 10 minutes until the syrup thickens and turns golden brown.
Add half of the sliced ginger into the syrup pot and stir well.

Cook the dessert
When the syrup is simmering, gradually add the loosened sticky rice into the syrup pot, using chopsticks to stir until the sugar and sticky rice are well combined.
Continue stirring until the sticky rice thickens, feeling heavy when stirring and the sticky rice turns a reddish-brown color, then add the remaining half of the sliced ginger into the pot and turn off the heat.

Completion
Scoop the dessert into a bowl or a deep dish, then sprinkle white sesame seeds and peanuts on top to enjoy immediately. To make the dessert look beautiful and appealing, you can scoop the dessert into a mold, press it firmly, then turn it out onto a plate and sprinkle sesame on top.
