How to Cook Braised Oxtail with Pumpkin

  • Prepare Ingredients

    Clean the oxtail by scraping off any remaining hair.

    Next, wash the oxtail thoroughly to remove any odor; rub it with 1 tablespoon of salt and rinse with clean water.

    Then, cut it into bite-sized pieces about 2 finger lengths long.

    Tip to Prepare Oxtail Without Odor: Besides the above method, you can also remove the odor by boiling the oxtail in a pot with 500ml of water over medium heat. Once the water boils, blanch the oxtail for 7 – 10 minutes, then remove and wash it clean.

    For the corn, remove the husk and silk, then cut it into bite-sized pieces about 2 finger lengths long.

    Peel the pumpkin, wash it, then cut it in half and into thirds, using a spoon to scoop out the seeds.

    Peel the carrot, chayote, sweet potato, and winter melon, wash them, and cut them into bite-sized pieces about 1 finger length long.

    Wash the green onions and scallions, then cut them into pieces about 1 finger length long.

  • Slow Cook Oxtail with Ingredients

    Add pumpkin and oxtail into the pressure cooker, add green onions, thyme, and 500ml of chicken broth. Pour in enough water so that it covers the ingredients by about one finger’s length.

    Next, cover the pot and set it to cook for 30 minutes on medium heat. After 30 minutes, remove the pumpkin and add carrots, sweet potatoes, winter melon, chayote, corn, and 1 teaspoon of whole peppercorns. Cover and cook for an additional 20 minutes.

    Once the pumpkin is removed, mash it with a ladle. When the cooking time is up, add the mashed pumpkin, along with 1 teaspoon of salt and 1 teaspoon of ground pepper.

    Taste and adjust the seasoning as needed, then add chopped green onions, and it’s done!
