How to Choose Fresh Ingredients
How to choose fresh shrimp
- Choose shrimp that have transparent legs and cling tightly to the body.
- The shrimp’s body is slightly curved, the flesh is firm, and the shrimp is not too large.
- The shrimp shell is intact, the head is firmly attached to the body. The tail is neatly arranged, not spread out or missing.
- Shrimp should have a natural smell and no strange odors. It is advisable to buy shrimp from reputable establishments to ensure quality.
How to choose fresh zucchini
-
You should prioritize selecting straight zucchini that feel firm and not soft when held. The skin should not be scratched, have bruises, or signs of insect intrusion. The stem of the zucchini should be intact and fresh.
-
Additionally, choose zucchini that are of moderate length and have a color that is not too irregularly green, as these are typically standard, not too young, and not overly mature.
How to choose good carrots
- You should choose carrots that are straight, have a smooth outer skin, bright color, feel firm, hard, and heavy when held, as these are the good ones, rich in vitamins.
- It is advisable to select those with a small core, as the smaller the core, the sweeter the carrot.
- You should not choose those with leaves or branches at the base, or those with a large, thick shoulder, as these typically have a large core and are less sweet with fewer nutrients.
- Avoid buying carrots that are misshapen, dark-colored, bruised, or have wilted leaves.
How to choose good bell peppers
- To select good bell peppers, you should choose those with a shiny, smooth, thick skin, still attached firmly to the stem, feel heavy when lifted, and have bright colors. These will be fresh bell peppers rich in nutrients.
- Avoid buying soft, mushy bell peppers, those with dark spots, dull colors, or cracks, as these are spoiled and lack nutrients.

-
Prepare the ingredients
Wash bell peppers and zucchini, cut them into small pieces so that they can be blended easily in the blender.
Peel the onion and carrot, cut them into pieces and add to the blender along with the bell peppers and zucchini.
Then turn on the blender and blend for about 10 – 15 seconds until the vegetables are finely chopped, but not pureed.
Shrimp should be bought, with the heads removed, peeled, and the shrimp threads pulled out. After that, rinse several times with water and drain.
-
Making the dipping sauce
Add 150ml of soy sauce, 100ml of water, 1 tablespoon of sugar, 3 teaspoons of chili sauce, and 1 teaspoon of pepper into a pot in order. Use a spoon to stir the mixture well.
Place the pot on the stove, turn the heat to medium. Stir while cooking until the sauce in the pot boils, then turn off the heat.
Note: Remember to stir while cooking to prevent the bottom of the pot from burning, which can affect the flavor of the dish. -
Frying the rice
Place a pan on the stove, add about 1 tablespoon of cooking oil to the pan, and set to medium heat. When the oil starts to heat up, add the chopped vegetables into the pan, seasoning with 1/3 teaspoon of salt. Stir well and sauté the vegetables for about 5 – 7 minutes until they are cooked and slightly dry.
Next, add the shrimp to stir-fry, adding 1/2 teaspoon of pepper, and stir until the shrimp turns slightly firm and red, then add 1 bowl of white rice to the pan. Mix all the ingredients together and stir-fry for about 10 minutes, then turn off the heat.
Note: You can season the fried rice according to your taste, but don’t make it too salty. Because this dish also comes with a dipping sauce. -
Frying the omelet
Break 3 eggs into a bowl, add 1/2 teaspoon of salt, and whisk well to combine the eggs with the seasoning.
Place a pan on the stove, add 1 tablespoon of cooking oil to the pan. Heat the oil over medium heat. Then pour the eggs into the pan, spreading them evenly across the surface. Gently stir and use chopsticks to pull the eggs from the edges toward the center of the pan to create patterns in the eggs. Fry until the eggs start to cook, still slightly moist on top, then turn off the heat.
Tip: You can also use a stand mixer or a blender to beat the eggs, creating a fluffy and smooth texture for the eggs. -
Completion
Place the fried rice into a bowl and press it down firmly. Then, invert the bowl onto a plate and remove the bowl.
Next, place the fried egg on top, covering the rice completely. Drizzle some sauce around the edges of the rice.
