Shrimp paste 5 tablespoons Green chili 5 pieces Minced shallots 1 teaspoon Minced galangal 1 tablespoon Minced lemongrass 2 tablespoons Minced garlic 1 tablespoon Pork fat 5 tablespoons Oyster sauce 2 tablespoons Cooking oil 2 tablespoons Common seasoning a little (Salt/ sugar/ seasoning powder/ MSG)

How to prepare Fried Rice with Fermented Shrimp Paste

  • Mix the fermented shrimp paste

    You put into a bowl 4 tablespoons of sugar, 1 tablespoon of seasoning powder, 5 chopped green chilies, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 5 tablespoons of fermented shrimp paste, then mix well.

  • Stir-fry the fermented shrimp paste

    Place a pan on the stove and turn on medium heat, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add minced shallots, minced garlic, minced galangal, and minced lemongrass to sauté until fragrant.

    When the mixture of shallots and garlic is fragrant and golden, add 2 tablespoons of oyster sauce, stir gently, then turn off the heat, next add the mixed fermented shrimp paste from above, and continue to stir well to combine.

    Finally, transfer the fermented shrimp paste to a bowl, pour 3 tablespoons of pork fat on top, and mix well. If not consumed immediately, you can store it in the refrigerator for up to 2 weeks.

  • Fry the rice

    Place the pan on the stove over medium heat, add 2 tablespoons of lard, wait for the fat to heat up, then add 2 cups of cold rice and fry for about 2 minutes before adding 3 tablespoons of shrimp paste to stir-fry.

    Then mix well and stir-fry over medium heat for another minute, then season to taste and turn off the heat.
