  • You should choose live shrimp that are moving, with their tails curled down. The head should be firmly attached to the body, and the back of the shrimp should be slightly curved, not upright.
  • In addition, fresh shrimp will have a natural river smell, without any unusual or no smell.
  • Avoid buying shrimp with straight bodies, whose segments on the shell are expanded and show signs of swelling in the abdomen and back. Because these shrimp may have been soaked in chemicals.
  • Furthermore, you should not choose shrimp that are pale in color, uneven, and with tails fanned out like a fan. These shrimp are spoiled and no longer tasty.

  • Choose water mimosa with dark green, fresh, glossy leaves.
  • The stem should be fat, crispy, and tender, not hard, with a translucent and juicy appearance.

  • Prepare the fresh shrimp

    Fresh shrimp should be cut off the head and tail, washed with salt, then rinsed with clean water and drained.

  • Sauté garlic and chili with shrimp

    Put the water spinach into a small bowl and then add all the cooled sautéed shrimp, followed by adding 3 – 4 teaspoons of lime juice.

    Mix the mixture well and season to taste to complete.
