  • You should choose beef pieces that are bright red with streaks of fat that are light pink. When you press lightly on the meat with your finger, you will feel a distinct elasticity, it should not be slimy or sticky, and there should be no unusual odor.
  • Additionally, you should select tender beef with small fibers that do not look too fine. In fact, buying young beef is even better, or you should choose female beef as it is tastier than male beef.
  • On the contrary, you should not buy beef pieces that have turned pale green or unusually dark red, with fat that is a deep yellow, and showing white spots on the meat that feels mushy and slimy when touched.

  • You should buy water spinach that looks fresh, with light green leaves and few pests. When you break the stem in half, it should exude clear white sap and mucus. Choose water spinach with small stems instead of those with large stems and leaves, as the latter may have been treated with growth hormones or over-fertilized with nitrogen.

How to prepare Beef Salad with Water Lily Stem

  • Preparing the beef

    Clean the beef, slice it thinly, then marinate with 1 spoon of minced garlic, 1 spoon of seasoning powder, 1 spoon of sugar, 1 spoon of cooking oil, 1 spoon of soy sauce, and a little ground pepper. Mix well and let it marinate in the refrigerator for 15 minutes.

    Heat a pan on the stove, add 1 spoon of cooking oil, and heat the pan over medium heat. When the oil is hot, add 1 spoon of minced garlic and sauté. When the garlic turns golden and fragrant, add the beef and stir-fry.

    Quickly stir the beef for about 5 minutes until it is medium rare, then add the sliced onion and stir well for another 5 minutes. Adjust the seasoning and turn off the heat to finish the beef part.

  • Make the salad dressing

    Gradually add 9 teaspoons of fish sauce, 3 teaspoons of vinegar, 6 teaspoons of sugar, 3 teaspoons of minced chili, and 3 teaspoons of minced garlic into a small bowl and stir the mixture until the ingredients are completely dissolved.

    Take the sautéed beef with onions and pour it into a large bowl containing the cleaned water spinach.

    Drizzle the prepared salad dressing over the bowl until it tastes just right. Mix well and let it marinate for 3 minutes to allow the vegetables to absorb the seasoning.

    Transfer the water spinach mixed with beef onto a large plate, add a few slices of tomato, and sprinkle with 3 teaspoons of fried shallots, then serve and enjoy with your family.
