Grouper fish head 500 gr Tomatoes 2 pieces Okra 50 gr Bean sprouts 100 gr Vietnamese coriander a little Chili 3 pieces Minced shallots 2 bulbs Cooking oil 1/2 tablespoon Fish sauce 1 tablespoon Salt a little Common spices a little (salt/ seasoning powder/ sugar/ monosodium glutamate/ ground pepper)

  • Choose fresh, live grouper fish with a large head.
  • The fish skin should still be elastic, moist, the color of the skin should still be fresh, not discolored, and the black areas of the skin should be intact.
  • Choose fish with clear eyes that have not turned cloudy, and there should be no unpleasant odor.
  • For fish that have been processed, pre-packaged, and frozen, you should buy fish with clear origin and source.
  • Additionally, if you notice any abnormal signs such as bloating, weak swimming, or pale color, do not choose to buy.

  • You should choose tomatoes with a plump, bright red skin that is evenly colored, as these are usually ripe and fresh.
  • Those with green, fresh stems still attached to the top of the fruit are typically fresh and recently picked, so they will taste sweeter and crisper.
  • Do not choose tomatoes with wrinkled skin or those that feel soft and mushy when gently pressed, as these are usually overripe or have been harvested for a long time.

  • You should choose bean sprouts with long roots, as those grown traditionally typically take 5 – 7 days to harvest, resulting in relatively long roots, unlike those soaked in chemicals which have short roots.
  • Prefer to choose bean sprouts with long, thin, and uneven stems, as this is a characteristic of traditionally grown sprouts rather than chemically treated ones.
  • Do not choose bean sprouts with thick, white, and shiny stems or those with dark and short roots. These are usually signs of sprouts treated with growth hormones, which may not be safe for consumption.

How to choose fresh and delicious okra

  • Choose okra pods that have a beautiful shiny green color, with a lot of fine hairs on the outer skin, and are of moderate size, not too big or too small.
  • It is advisable to select pods that are not too long, ideally fitting in the palm of your hand, as longer and larger pods will be older, resulting in a fibrous texture and poor taste.
  • Avoid purchasing okra pods that are soft, have dark spots, or no longer have fine hairs clinging to the skin, as these indicate that the okra is overripe or has been harvested for a long time, and will not taste good.

How to prepare Grouper Head for Sour Soup

  • Prepare and Marinate Grouper Head

    To reduce the fishy smell of the grouper head, you should rub coarse salt thoroughly around the surfaces of the fish head, then rinse it with clean water and let it drain.

    Cut the fish head into 2 – 3 pieces for easy consumption and place them in a bowl to marinate with minced shallots, 1/2 tablespoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of ground pepper. Let it sit for about 30 minutes for the fish head to absorb the spices.

    How to clean grouper head, without fishy smell:

    • Method 1: Mix a little cold water and vinegar, soak the cleaned fish in it, and rinse again; the fish will quickly lose its fishy smell.
    • Method 2: Dilute lemon juice, soak the fish in it for a few minutes, then clean the fish as usual.
    • Method 3: Use diluted white wine to marinate the fish meat for about 2 minutes, then dry it off; this will also significantly reduce the fishy smell.

  • Prepare other ingredients

    Wash the tomatoes and cut them into wedges. Wash the cilantro and chop it finely.

    Wash the okra and cut it diagonally. Wash the bean sprouts. Remove the stems from the chili, wash it, and slice it.

  • Cook sour soup

    Place a pot on the stove, add 1/2 tablespoon of cooking oil to the pot. When the oil is hot, add the tomatoes and stir-fry over medium heat for about 2 minutes.

    Add 1 liter of water and bring to a boil. When the water boils, add the marinated fish head and sliced chili, pressing down gently to submerge the fish head in the water.

    Cook for about 15 minutes, when the fish head is cooked, add 1/2 tablespoon of fish sauce, 1/2 tablespoon of sugar along with the okra, bean sprouts, and cilantro.

    Press the ingredients down to submerge them in the water, wait for the soup to boil for about 2 minutes, then taste and adjust the seasoning as needed, and turn off the heat.
