How to choose fresh and delicious tomatoes
- You should choose tomatoes with a smooth, shiny skin, plump and evenly colored red, these are the delicious tomatoes.

How to make steamed snakehead fish with beer

Prepare the fish
After purchasing the snakehead fish, you should clean the scales, remove the gills and entrails. Then rinse with diluted salt water for better meat flavor as snakehead fish is a freshwater fish.
How to clean snakehead fish without a fishy smell:
- First, ensure that you have cleaned the fish’s intestines thoroughly, including the blood vessels sticking to the fish meat.
- Then, marinate the snakehead fish with a little white wine for about 5 – 7 minutes and rinse with water, then let it drain.

Prepare other ingredients
You take 2 tomatoes cut into wedges, 5 stalks of lemongrass (crushed) and 5 stalks of green onion cut into pieces about the length of your little finger.
With 100g of dill, cut into short pieces about 2 little finger lengths, and chop 2 shallots finely.

Arrange and marinate the fish
You evenly spread 1/2 of the lemongrass in the pot, then place the snakehead fish on top, followed by layers of green onion, dill, chili, shallots, tomatoes, and finally the remaining 1/2 of the lemongrass.
To marinate the fish, add 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of fish sauce, 1/2 teaspoon of cooking oil, and the prepared beer.
