Prepare other ingredients
Peel the onion and shallots, then wash them clean. Take 3 shallots and chop them finely, leaving the remaining three whole for the chicken stewing step.

Wash the bean sprouts, celery, Vietnamese coriander, and chives with water. Cut the celery, Vietnamese coriander, and chives into sections.

Stew the chicken
Put a pot on the stove, and place the chicken in the electric pressure cooker to stew until cooked.
Add 2 teaspoons of whole pepper, 2 tablespoons of seasoning powder, 2 tablespoons of sugar, 1 tablespoon of salt, 1 onion, 3 shallots, 4 slices of ginger, and 400ml of water into the pot.
Then close the lid and stew the chicken in the electric pressure cooker for about 20 to 25 minutes.

Fillet the chicken
Remove the chicken from the pot and place it in a bowl of cold water to cool it down quickly.
First, you fillet all the meat from the thigh and the area close to the thigh, then turn the chicken over and remove all the white breast meat, and shred all the skin-on meat from the chicken’s back.
The pieces of meat that have been filleted should be shredded into bite-sized pieces.
Tip:- Between the chicken thigh and the drumstick, there is a connecting joint; use a knife to cut right in the middle of that joint to separate the two parts for easier filleting.
