- Good chicken will have thin skin with a natural yellow color, the meat inside is slightly off-white, and when pressed with your hand, it has good elasticity.
- You should buy pre-prepared chicken at chicken stalls in markets or supermarkets to save time; if it is pre-packaged chicken, you need to carefully check the packaging and expiration date.
- You should not buy chicken if the skin has many bruises, and the meat inside has blood clots, as this may indicate sick chicken.
- If you smell a strange odor, the chicken lacks a certain degree of elasticity and is watery, then you should not buy it; this chicken is no longer of good quality and can easily affect your health when consumed.

How to choose quality dried shiitake mushrooms
- Quality dried shiitake mushrooms will have a naturally bright brown color, with the cap and stem intact and firmly attached to each other.
- When held, they feel dry and light, with a faint characteristic aroma of mushrooms when brought close to the nose.
- You should not choose shiitake mushrooms that have a strange smell, show signs of dampness, or have unusual spots on the surface.

Information about red fermented tofu
- Red fermented tofu has a shape and preparation method similar to white fermented tofu; however, red fermented tofu will have a red color and a more distinctive flavor thanks to the addition of chili during the fermentation process.
- You can easily buy red fermented tofu at markets, supermarkets, or e-commerce sites. When buying, make sure to check the packaging and expiration date. The longer the tofu is fermented, the tastier and more flavorful it will be when eaten.

Prepare the chicken
For the chicken thighs, remove any fine hairs (if any), to eliminate the unpleasant odor of the chicken, soak the chicken thighs in warm water for about 20 minutes. Then rinse with clean water and let drain.
Tip: Additionally, you can eliminate the odor of chicken meat using the following method.
- Mix a salt and vinegar solution in a ratio of 1:2 and rub it all over the chicken meat several times, then rinse with clean water.
- You can replace vinegar with ginger or lemon in the above recipe, which is also very effective.
To allow the chicken thighs to absorb the seasoning better when marinating, use a toothpick (or fork) to poke small holes in the chicken thighs.

Prepare other ingredients
Dried shiitake mushrooms bought should be soaked in warm water for about 20 minutes to soften the mushrooms, then rinse with clean water and squeeze out excess water.
Shallots and garlic should be peeled and sliced thinly. Ginger should be peeled and sliced thinly.
Green onions should have the roots and yellow leaves cut off, washed clean and drained, then chopped finely.

Marinate the chicken
Put all the chicken thighs into a bowl and season with the spice mixture including: 2 pieces of red fermented tofu, 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of pepper, 1 teaspoon of salt, 1 teaspoon of sugar, then mix well and marinate for 30 minutes to let the chicken thighs absorb the spices.

 Braised Chicken
Add all the sliced shallots, garlic, and ginger into the pressure cooker, then add all the marinated chicken thighs into the pot.
Next, pour in 1 can of beer and place all the softened dried shiitake mushrooms on top. Close the lid and braise the chicken over medium heat for about 15 minutes.
After 15 minutes, open the lid, stir all the ingredients well, and cook for another 5 minutes before turning off the heat. Scoop the braised chicken with shiitake mushrooms and beer into a bowl, sprinkle some chopped green onions on top, and you can enjoy it right away.
Tip: If you use a regular pot or rice cooker to braise the chicken, increase the time to about 25 minutes for the chicken to be tender.
