Preparation of bamboo shoots and vegetables
Fresh bamboo shoots after purchase should have the old outer layer removed, taking the tender white part inside, then cut into thin pieces about the length of a finger.
Next, soak in salt water for about 10 minutes to eliminate toxins, then rinse with clean water. Place a pot on the stove with 1 liter of water, boil for about 10 minutes over medium heat, then rinse again and let it drain.
Green onions, basil, and cilantro should be washed clean, keeping the roots of the cilantro while the cilantro leaves are chopped finely along with the green onions.
