How to choose safe fresh bamboo shoots

  • For bamboo shoots that haven’t been peeled, you should choose large, round buds with black outer leaves and lots of stiff hairs on the outside.
  • For bamboo shoots that have already been peeled, choose those that are coarse with evenly spaced segments.
  • Visually inspect; if the bamboo shoots have thin, crispy skin and are juicy, they should be selected, as they will have a light, fragrant sour smell when cooked.
  • Avoid buying bamboo shoots that are too white or brownish-yellow, have an unpleasant odor, or are soft and mushy.

How to choose delicious duck meat

  • You should choose to buy Muscovy duck instead of other ducks because they are often fattier and more fragrant, making it easier to clean the feathers. Additionally, male duck meat will be better than female duck meat.
  • If buying live ducks, you should observe the outer layer of feathers; good ducks that are old enough will have complete feathers and a smooth coat, with a rounded breast, thick neck skin, and thick belly skin.
  • If you buy pre-processed ducks, you should choose those that have just been slaughtered, with the outer skin having a yellow color, and press your hand to feel the elasticity.
  • Do not choose ducks with overly dark skin color, spots, or bruises; if pressed, the meat deforms and sinks deeply inside due to possibly being water-injected.

How to prepare Fresh Bamboo Shoot Duck Stew

  • Prepare the duck meat

    After purchasing the duck, wash it thoroughly with water, pluck out any remaining feathers, use a knife to cut the meat into small pieces, and wash it again with water.

    To remove the smell of the duck, crush a large piece of ginger, squeeze out the ginger juice, and rub it onto the duck meat, then wash it again with water and let it drain.

    Next, marinate the duck with 2 spoons of seasoning powder, 1/2 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate, then let it sit for 10 minutes for the spices to absorb.

    • Method 1: After washing the duck, use a mixture of white wine and crushed ginger to rub all over the duck and then wash it again with water and let it drain.
    • Method 2: Prepare a mixture of salt, lemon or vinegar dissolved in water, rub it vigorously over the duck, and wash it clean with water again; then, chop the duck to proceed with cooking.

  • Preparation of bamboo shoots and vegetables

    Fresh bamboo shoots after purchase should have the old outer layer removed, taking the tender white part inside, then cut into thin pieces about the length of a finger.

    Next, soak in salt water for about 10 minutes to eliminate toxins, then rinse with clean water. Place a pot on the stove with 1 liter of water, boil for about 10 minutes over medium heat, then rinse again and let it drain.

    Green onions, basil, and cilantro should be washed clean, keeping the roots of the cilantro while the cilantro leaves are chopped finely along with the green onions.

    Shallots should be peeled, washed, one bulb chopped finely, another bulb cut into wedges, and the onion should be lightly roasted over the fire.

  • Stir-fry duck briefly

    Place a pan on the stove, add 3 tablespoons of cooking oil, and turn on medium-low heat until the oil is hot. Then add the marinated duck meat and stir-fry for about 5 – 7 minutes until the duck is firm, the skin is slightly golden, and the duck has released all its fat, then turn off the heat.

    To save time, while stir-frying the duck, boil a pot of water containing about 1 liter of water, so that by the time you finish stir-frying, the water is already boiling.

    When the water is gently boiling, add the briefly roasted onion and the sliced shallots to the pot. To make the broth clearer and eliminate any unpleasant smell, use chopsticks to gradually add the stir-fried duck pieces into the pot, leaving the fat in the pan.

    When you see the mixture boiling, add the cilantro roots and all the prepared bamboo shoots.

    Boil for about 10 minutes, then add 1/2 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder, and adjust the taste to suit your family’s preferences.

    Continue to cook for about 5 – 7 minutes until the duck is fully cooked, then turn off the heat and add all the chopped onions and fried shallots.

    Scoop the broth into a bowl of fresh noodles that you have prepared in advance, add more fresh bamboo shoots and duck on top, sprinkle with a little basil for fragrance, and it’s ready to enjoy.
